  • Popsicle Molds: You are going to want to use a popsicle mold that is made of silicone, this way the pops can be released easily.
  • Mixing Bowls: I like having a variety of sizes so that I can use them for different things. For example the medium sized bowl is perfect for placing over a pot of simmering water to create a double boiler.

Ingredients:

  • Peanut Butter: I like to use one that is all natural and creamy.

  • Place pitted dates in a heat proof bowl. Pour boiling water on to to cover. Let the dates sit in the water for 10 minutes then drain dates, reserving the water.
  • Place the dates in the bowl of a food processor along with the bananas and peanut butter. Add 2 tablespoons of the reserved date water and pulse several times until a paste forms.
  • Fill the Ice Pop Tray with the mixture then place in the freezer for at least two hours to set.
  • Add chocolate and coconut oil to a small bowl set over a small pot of simmering water until melted and smooth. Pour melted chocolate into a tall thin glass ( making sure its wide enough to fit the ice pop )
  • Take the pops out of the freezer and remove them from their tray. Dip each pop in the melted chocolate then place it on a sheet of parchment paper. Top each pop with the chopped peanuts then return them to the freezer to set.
