So when getting ready to make my lates version of date bark, I started thinking. Since it was summer, I was craving something that was not only sweet but cold as well. That is when the idea for these Peanut Butter Banana Pops came to mind. with all the great flavors of my traditional date bark, blended up, frozen and dipped in chocolate to create the perfect summer treat.

What You Need To Make These Peanut Butter Banana Pops

Equipment:

  • Popsicle Molds: I like to use a Popsicle Mold made of silicone for easy release. The one I used (link provided) comes with everything you need to make these tasty treats, minus the ingredients of course.
  • Food Processor: Having a good Food Processor is important for making these pops. Since the ingredients are quite thick, you will want to use a processor with a lot of power to be able to pulverize them.
  • Glass Bowls: I find that having mixing bowls in a variety of sizes is helpful in the preparation of a recipe. I always opt for glass due to the fact that they are easy to clean and do not react with acidic ingredients. When choosing bowls it is important that they are heat resistant as well.

Ingredients:

  • Dates: Using Pitted Dates will make it much easier to make this recipe. Just soak them in hot water to soften and then they are ready to use.
  • Bananas: You will want to use very ripe bananas, you know the ones with with brown spots that everyone seems to avoid. This is when they are at there sweetest.
  • Peanut Butter: I like to use an Organic Creamy Peanut Butter for this recipe.
  • Chocolate: I chose to dip these bars in a Bittersweet Chocolate for extra richness and health benefits.
  • Coconut Oil: This is melted with the chocolate to give it a smoother texture.

A fun take on Date Bark. These Peanut Butter Banana Pops are not only delicious but super easy to make. The perfect treat without all the guilt.

Ingredients

  • Prepare pop trays by placing popsicle sticks inside each one then set to the side.
  • Place dates in a small heat proof bowl. Pour boiling water on top to cover. Let the dates sit in the hot water for 10 minutes. Drain dates reserving the water and set to the side.
  • Place the dates in the bowl of a food processor along with the bananas and peanut butter. Add 2 tablespoons of the reserved date water and pulse several times until a paste forms. If necessary add more date water 1 teaspoon at a time to make smooth.
  • Fill an ice pop tray with the mixture and place in the freezer for two hours to set.
  • Add chocolate and coconut to a small heat proof bowl and place it over a small pot of simmering water until melted and smooth. Pour melted chocolate into a small glass.
  • Remove the pops from there trays and one at a time, dip them in the melted chocolate until covered. Place chocolate covered pop on a piece of parchment paper and sprinkle the top of the pop with chopped peanuts. Repeat this process until all the pops are coated. Return pops to the freezer to set. These pops can be stored in the freezer up to 2 weeks in a sealed container.
