This Peaches & Cream Dutch Baby is the perfect way to wow your family with a simple delicious breakfast that they will love. If you have never heard of a Dutch Baby, it is basically a pancake that is baked in the oven in a skillet. No standing by the stove making 1 or 2 pancakes at a time. A Dutch Baby is one large baked pancake that once it is done, is sliced and topped with your favorite topping. You can make it in a variety of flavors like, blueberry, strawberry, apple and pear, or even savory options with bacon and shredded cheese but since it is summer and the peaches are at there sweetest, I decided to go with peach.

Ingredients Needed To Make This Dutch Baby:
You can have this Dutch Baby ready in 30 minutes with ingredients you probably already have.
* Flour: All purpose is perfect.
* Butter: Unsalted is best. Allowing the butter to brown slightly will add a depth of flavor.
* Eggs: Just like regular pancakes, a Dutch Baby requires eggs. Keeping them at room temperature will allow them to blend easily.
* Milk: I like to use whole or 2%.
* Vanilla Extract: I always opt for pure vanilla extract rather than Imitation Vanilla Extract.
* Ground Cinnamon: Cinnamon will add a warmth to your Dutch Baby and is the perfect complement to the juicy peaches.
* Salt: A pinch of salt added to recipes will enhance all the flavors.
* Peaches: You want ripe but firm peaches. No need to peel, just cut in half, twist to separate, remove pit and slice into thin slices.

Peaches & Cream Dutch Baby

Ingredients
4 Tablespoons unsalted butter
2 Small peaches, thinly sliced
2/3 Cup whole or 2% milk
4 Eggs
2 Teaspoons pure vanilla extract
2/3 Cup all purpose flour
2 Teaspoons ground cinnamon
Pinch of salt
Fresh whipped cream
2 Peach pealed and diced for topping
Maple syrup
Directions
- Preheat oven to 425º. To a blender, add the milk, eggs, vanilla, flour, cinnamon and salt. Blend on high for 20 to 30 seconds or until smooth, making sure no lumps remain.
- Add butter to a large skillet on medium heat until melted and slightly browned. Place sliced peaches in the skillet in a circular motion. Allow the peaches to cook for 2 to 3 minutes.
- Gently pour the smooth batter into the hot skillet. Place skillet in the preheated oven and bake for 20 to 22 minutes or until golden and puffy. Do not open oven during cooking. Opening the oven might deflate your Dutch Baby.
- Remove from oven and top with fresh whipped cream and diced peaches.
- Slice and serve with warm maple syrup.
