What You Will Need To Make This Dish

Equipment:

  • Casserole Dish: For this recipe you are going to want to use 9” x 13” casserole dish. I like to use a ceramic dish because they distribute the heat evenly and retain that heat throughout cooking. They are non stick and they are super versatile, going from oven to table seamlessly.
  • Glass Mixing Bowls: I like having mixing bowls in a variety of sizes. This helps in the prepping of recipes. I prefer glass mixing bowls due to the fat that they do not react with acidic ingredients which could change the outcome of some recipes.
  • Whisk: Having a good whisk will help with the mixing of your wet ingredients.

Ingredients:

  • Brioche: For this recipe I used Trader Joe’s Pumpkin Brioche Twist, but a regular brioche will work as well.
  • Pumpkin Puree: You are going to want to use a pumpkin puree not a pumpkin pie mix.
  • Sugar: A Dark Brown Sugar will add a nice caramelized flavor.
  • Spices: This recipe calls for both Pumpkin Spice and Ground Cinnamon, both of which will add a ton of flavor and a bit of warmth to the dish.
  • Eggs: This is the base for the custard.
  • Milk: Whole or 2%.
  • Pure Vanilla Extract I always opt for pure vanilla extract due to its intense vanilla flavor.
  • Flour: A good All Purpose Flour works well.
  • Pecans: Sprinkled on top for a little extra crunch.
  • Butter: I use unsalted so that I can control the salt in my recipes.

Soft pumpkin flavored brioche, a rich pumpkin custard and a sweet and crunchy pecan streusel brought together to create a delicious dish with all the great flavors of fall. Perfect for a weekend brunch or holiday get together.

Ingredients

Directions

  • Spray a 9” x 13” casserole dish with baking spray. Place the brioche cubes in the casserole dish and spread out.
  • In a large mixing bowl, whisk together the pumpkin puree, brown sugar, pumpkin spice, eggs, milk and vanilla extract until smooth. Pour the mixture over the brioche cubes, pressing down on the brioche slightly to make sure all the custard is absorbed. Cover the casserole dish with plastic wrap and place in the refrigerator overnight.
  • The next day, preheat the oven to 350º. In a medium bowl, whisk together the flour, brown sugar, ground cinnamon and pecans until incorporated. Pour in the melted butter and using a fork, mix until combined. Place in the refrigerator until ready to use.
  • Remove the plastic wrap from the casserole dish. Sprinkle the top with the prepared crumble then place in the preheated oven to bake for 50 to 55 minutes or until golden and puffy. Remove from oven, slice and serve with maple syrup.
  • Enjoy.
