Oatmeal Raisin Cookies

For my kids, their was nothing better then coming home from a long day at school to the smell of Oatmeal Raisin Cookies baking. With their crispy exterior and their soft chewy centers, I could always get them to smile no matter how hard their day was.

When I baked these the other day, my kids now just about all grown up, asked “ are those what I think they are “? They said that they brought back such great memories. I love when something can take you back to a place that brings you comfort. For all you Disney fans, like in Ratatouille when Anton Ego has a bite of Ratatouille and it brings him back to when he was a kid, standing in front of his mom with bruised knees, and her Ratatouille made it all better. It was very heart warming.

Now I have tried many different recipes through the years, but I always come back to this one. With just the right amount of sweetness, its the perfect snack after a long day.

You will want to cream your butter and sugar together until smooth. Once smooth add one egg at a time until nice and fluffy. The best way to accomplish this is to leave the butter and eggs out. Once they are at room temperature they will be much easier to work with.

Place all your dry ingredients into a medium bowl and mix to incorporate. With your mixer powered off, pour your dry ingredients into your wet ingredients and mix once again. Add your raisins and continue mixing until just combined being carful not to over mix. You don’t want tough cookies.

Now I like to use an ice cream scoop for scooping out cookies but a tablespoon will work fine also

Place rounded scoops onto a parchment lined baking sheet and bake in pre heated oven.

Oatmeal Raisin Cookies:

Ingredients:

  1. 1 Cup ( 2 sticks ) unsalted butter at room temperature
  2. 1 Cup light brown sugar
  3. 1/2 Cup granulated sugar
  4. 2 Eggs
  5. 1 Cup all purpose flour
  6. 1/2 Cup toasted wheat germ
  7. 1 Teaspoon baking powder
  8. 1 Teaspoon baking soda
  9. 1 Teaspoon ground cinnamon
  10. 1 Teaspoon pure vanilla extract
  11. 1/2 Teaspoon salt
  12. 3 Cups old fashion oats

Instructions:

  1. Pre heat oven to 350º. Line a baking sheet with parchment paper and set aside.
  2. Beat butter and sugars in the bowl of a stand mixer fitted with a paddle attachment until creamy. Add eggs and vanilla and beat until fluffy, about 2 minutes.
  3. In a medium bowl stir together flour, wheat germ, baking powder, baking soda, cinnamon, salt and oats. Add dry ingredients to wet ingredients and mix to combine. Add raisins and continue mixing until incorporated.
  4. Using a small ice cream scoop, drop dough onto prepared baking sheet and place in pre heated oven and bake for 10 to 12 minutes or until golden around the edges.
  5. Remove from oven and tap tray on the counter to flatten cookies a bit.
  6. Enjoy
