Mocha Slices

These Mocha Slices are the perfect treat. A rich and tender chocolate cookie that has just the right amount of espresso powder added, then topped with sparkling sugar for that little extra crunch.

Mocha Slices

Ingredients:

  • 2/3 Cup unsalted butter, softened
  • 2 Egg yolks
  • 1 Teaspoon pure vanilla extract
  • 1 1/3 Cups all purpose flour
  • 2/3 Cup granulated sugar
  • 2 Tablespoons unsweetened cocoa powder
  • 1/2 Teaspoon baking powder
  • 1 Teaspoon instant espresso powder
  • Egg white
  • Sparkling sugar or course sugar

Instructions:

  1. To a medium bowl combine the all purpose flour, cocoa powder, baking powder and espresso powder. Set to the side. To the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and sugar until light and fluffy. Add the egg yolks and vanilla and beat until combined. Beat in the flour mixture until combined.
  2. Preheat oven to 350º. Line a baking sheet with parchment paper and set tot the side. Divide dough into six portions. Roll each portion into a 12” long rope, about 3/4” thick. Place ropes on prepared baking sheet. Flatten each rope slightly. Brush with egg whites and sprinkle with sparkling sugar.
  3. Place in preheated oven and bake for 12 minutes or until edges are firm. Remove from oven and allow to cool on the pan for 5 minutes. Carefully transfer ropes to a cutting board. While still warm cut on an angle into 1” pieces.
  4. Enjoy
