These Cupcakes scream lemon. Between the lemon zest, lemon juice, lemon extract and lemon curd there will be no mistaking that lemon flavor. Then topped with a sweet creamy blueberry buttercream to create the perfect bite.

Ingredients

  • For The Cupcake
  • 1 3/4 Cup All Purpose Flour

  • 1 Teaspoon baking powder

  • 1/2 Teaspoon Baking soda

  • 1/4 Teaspoon salt

  • 1/2 Cup unsalted butter at room temperature

  • 3/4 Cup Granulated Sugar

  • 1 Egg + 1 egg yolk at room temperature

  • 1 Tablespoon lemon zest

  • 2 Tablespoons fresh squeezed lemon juice

  • 1/2 Teaspoon Lemon Extract

  • 1 Cup plain full fat greek yogurt

  • 1/2 Cup Lemon Curd, homemade or store bought

  • For The Buttercream Frosting
  • 2 Cups fresh or frozen blueberries

  • Zest and juice of 1 Lemon

  • 1 Cup unsalted butter at room temperature

  • 3 1/2 – 4 Cups Powdered Sugar

  • 1 – 2 Tablespoons milk

Directions

  • If you are making your own Lemon Curd follow the link and prepare that first. It will have to cool completely before using.
  • For The Cupcakes
  • Preheat the oven to 350º. Line a Mini Cupcake Tray with Mini Cupcake Liners and set to the side.
  • To a large mixing bowl, whisk together the flour, baking powder, baking soda and salt until combined.
  • To a separate large mixing bowl, beat using a hand mixer, the butter and sugar together until completely combined. Add the egg and egg yolk and continue beating until fluffy. Add the lemon zest, lemon juice and lemon extract and continue beating until combined. Add half of the flour mixture and mix until just combined. Add the plain greek yogurt and beat until combined. Add the remaining flour and once again, beat until just combined.
  • Fill each cupcake liner on the prepared cupcake tray to 3/4 full. Place in the preheated oven and bake for 10 to 12 minutes or until a toothpick inserted in one of the cupcakes comes out clean. Remove from oven and allow to cool completely.
  • For The Blueberry Frosting
  • Bring blueberries, lemon zest and lemon juice to a simmer in a small saucepan. Stir occasionally and mash the blueberries along the way. Continue cooking until blueberries thicken, about 10 minutes. Remove from heat. Place a fine mesh strainer over a small bowl. Pour the cooked blueberries into the strainer. Using the back of a spoon, press on the blueberries to release as much juice as possible, leaving the pulp and any skin behind in the strainer. Place the strained juice on the side to cool completely.
  • To the bowl of a stand mixer fitted with a paddle attachment, beat the softened butter until smooth. With the mixer off, add the powdered sugar and 1/4 cup of the completely cooled blueberry juice and beat on low until combined. Raise to medium high and beat until smooth. If necessary add milk 1 tablespoon at a time, mixing after each addition until piping consistence.

  • Using a Flavor Injector, inject a small amount of lemon curd into the center of each cupcake.
  • Place blueberry frosting in a Large Piping Bag fitted with a Star Tip. Pipe a small amount of blueberry frosting on each cupcake. Drizzle a small amount of left over blueberry juice on top of each cupcake then serve.
