A super moist and tender loaf with the bright flavors of lemon and loaded with finely grated zucchini giving this Lemon Zucchini Bread the perfect amount of flavor and texture.

Ingredients

Directions

  • Preheat oven to 350º. Spray a 9” x 5” loaf pan with baking spray and set to the side.
  • In a large mixing bowl, whisk together the flour, baking powder and salt until combined.
  • In a separate large mixing bowl, whisk together the oil, buttermilk, sugar, eggs, vanilla extract, lemon zest and lemon juice. Until combined. Pour into dry ingredients and mix until almost combined. Fold in the shredded zucchini until incorporated.
  • Pour mixture into prepared loaf pan and place in the preheated oven to bake for 55 to 60 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.
  • To make the glaze, whisk together the powdered sugar and lemon juice until smooth and is at a drizzle like consistency, adding more lemon juice if needed to achieve this.
  • Remove bread from the loaf pan and place on a serving platter. Pour glaze over the top, allowing some to drip down the sides of the cake. Top with some some fresh lemon slices and serve.
