If your looking for a quick and easy mid week dinner that has great flavor and everybody will enjoy, this Lemon Honey Chicken Thigh is perfect. The chicken thighs are coated with spices then marinated in lemon honey and garlic then grilled up for a flavorful bite.
Chicken is pretty much a staple in my house. Due to my husband getting bit by the Lone Star Tick and because of that can no longer eat any other meat, we probably eat some form of chicken at least 5 to 6 nights a week. So I have tried to be creative with my chicken dishes.
I love thighs because they stay nice and juicy when cooked. Yes they do contain more fat then the breast meat but they also contain more flavor.
The best part of this dish is that it is super easy to make. Even with just a half hour of marinating time it turns out super flavorful and delicious.
How To Make Lemon Honey Barbecue Chicken Thighs
Now this recipe is for chicken thighs but if you prefer to use breasts, go right ahead.
Start by cleaning the chicken and placing it in a large casserole dish.
To a small bowl add dried oregano, dried thyme, smoked paprika, ground ginger, ground mustard seed and salt. Whisk spices together to combine. Sprinkle spices over thighs and massage in to coat.
To a small bowl add the fresh squeezed lemon juice, honey olive oil and minced garlic cloves and whisk to combine. Pour lemon mixture over chicken, turning chicken to coat. Place chicken in refrigerator for at least 30 minutes, more if you have the time, to marinate.
Bring grill up to medium heat. Remove chicken from the refrigerator and place thighs on hot grill. Cook for 8 to 10 minutes per side,165º with a thermometer or until no longer pink inside. Serve immediately.
Lemon Honey Barbecue Chicken Thighs
Ingredients:
- 2 Pounds of skinless boneless chicken thighs cleaned
Seasoning:
- 1 Teaspoon dried oregano
- 1 Teaspoon dried thyme
- 1 Teaspoon smoked paprika
- 1 Teaspoon ground ginger
- 1/2 Teaspoon ground mustard seed
- 1 Teaspoon salt
Lemon Honey Marinade:
- 2 Tablespoons fresh squeezed lemon juice ( about the juice from 1 lemon )
- 2 Tablespoons honey
- 2 Garlic cloves minced
- 5 Tablespoons olive oil
Instructions:
- Clean chicken and place in a casserole dish. Blot chicken dry with a paper towel to remove some of the moisture, this helps in the chicken getting a good sear.
- To a small bowl add the dried oregano, dried thyme, smoked paprika, ground ginger, ground mustard seed and salt. Whisk spices to combine. Sprinkle half the spices over the chicken then flip and sprinkle the remaining spices on the other side. Massage spices in to coat.
- In another small bowl combine the lemon juice, honey, minced garlic and olive oil. Whisk until completely combined. Pour marinade over chicken. Turn chicken to coat. Place in the refrigerator for at least 30 minutes or more if you have the time, over night is ideal.
- Bring grill up to medium heat. Place thighs on the grill and cook for 8 to 10 minutes per side, 165º with a thermometer or until no longer pink in the center. Serve immediately.
