Ingredients
3/4 Cup ( 1 1/2 stick ) unsalted butter, softened.
1 Tablespoon finely grated lemon zest
2 Cups all purpose flour
1/2 Teaspoon salt
2 1/2 Teaspoons Pure Vanilla Extract
Powdered sugar for coating.
Directions
- Start by placing the sugar and lemon zest in a small mixing bowl. Using your fingers, rub together until sugar becomes moist. Set to the side.
- To a bowl of a stand mixer fitted with a paddle attachment, beat butter on medium speed until smooth. Add the lemon flavored sugar and salt and continue mixing until combined. Beat in the pure vanilla extract. Add the flour and beat on low until incorporated. Divide dough in half and wrap each half with plastic wrap and chill for 1 hour or until dough is easy to handle.
- Preheat oven to 375º. Line a baking sheet with parchment paper and set to the side. Remove dough from the refrigerator and form into 3” logs, then curve into crescent shapes. Place on the prepared baking sheet 2” apart. Bake in the preheated oven for 8 to 10 minutes or until bottoms are lightly browned. Remove from oven and allow to cool slightly.
- Place 1 to 2 cups of powdered sugar in a medium bowl. Roll warm cookies in the powdered sugar then place on a wire rack to cool completely. Once completely cooled, roll in powdered sugar again and serve.
