Between work, school and after school activities, I sometimes just don’t have the time to put a nice dinner on the table. These are the nights when I am looking for a meal that I can have ready to eat in less than an hour and one that is not only nutritious but flavorful as well. This recipe will not disappoint. With chicken thighs or breasts that are infused with the flavors of fresh lemon, garlic and herbs. It’s the perfect meal to make for your family.
Ingredients Needed For This Dish
- Chicken Thighs Or Breasts: You can use either but I prefer thighs because they tend to be juicier. Skin on bone in.
- Lemon Juice: Fresh squeezed is the only way to go.
- Lemon Zest: For added lemon flavor.
- Olive Oil: I like to use a good extra virgin olive oil for all my recipes.
- Garlic: Finely minced.
- Oregano, Thyme & Parsley: I like to use fresh herbs but if they are not available to you, than dried herbs will do.
- White Wine: A dry white wine like a Pinot Grigio works well for this recipe.
Lemon Chicken

Ingredients
8 Bone in skin on chicken thighs or 4 bone in skin on chicken breasts
2 Tablespoons olive oil
2 Tablespoons minced garlic, about 7 or 8 cloves
1 Tablespoon lemon zest
3 tablespoons fresh squeezed lemon juice
1/3 Cup white wine.
2 Teaspoon dried oregano or 4 teaspoons fresh
2 Teaspoons dried thyme or 4 teaspoons fresh
Salt and pepper
1 Lemon, sliced for garnish
Directions
- Preheat oven to 400º. Place olive oil and minced garlic in a small saucepan over medium heat and cook until tender. Remove from heat and whisk in white wine, lemon zest, lemon juice, oregano, thyme, salt and pepper.
- Pour liquid into a 9” x 13” casserole dish. Place chicken, skin side up in the dish. Spoon some liquid over the top of each thigh. Tuck the lemon slices, skin side down as to not burn them between the thighs.
- Place in the preheated oven and bake for 30 to 40 minutes or until internal temperature comes to 165º when checked with a thermometer.
- Remove from oven and allow to rest for 10 minutes. Spoon some of the juice from the bottom of the pan over the chicken right before serving.
