Every year come summer I get a little excited knowing that peaches are in season. To me they are the perfect summer fruit. Super sweet and juicy and loaded with great flavor. Now most of the time I just grab a peach and eat it as is but every once in a while I like to incorporate them into a sweet or savory dish. Now I have made my fare share of sweet peach dishes, all of which were quite tasty. Now It was time to add those sweet peaches to a savory dish and this flatbread was ideal. A charred flatbread covered with a combination of arugula, sautéed onions, burrata and those grilled peaches Then drizzled with a balsamic glaze to finish it off. All brought together to create the perfect bite.

What You Need To Make This Flat Bread
Equipment:
- Baking Sheet: I like to use an aluminum baking sheet because of there ability to conduct heat and cook evenly.
- Parchment Paper: Using parchment paper will prevent sticking and also allow for an easy clean up.
Ingredients:
- Peaches: You will want to use peaches that are ripe. Just cut around the peach from top to bottom all the way around. Give the peach a twist and pull apart.
- Brown Sugar: To top the peaches.
- Arugula: Rinsed and spun dry.
- Balsamic Vinaigrette: For dressing the arugula.
- Red Onions: Peeled and sliced into thin slices.
- Apple Juice: Added to the onions to help in the caramelization process.
- Burrata: A mozzarella cheese that is filled with creamy ricotta.
- Toufayan Flat Bread: The perfect vessel for this dish.
- Balsamic Glaze: To drizzle on the flatbread.
Grilled Peaches, Caramelized Onions & Burrata Flat Bread

2 Large red onion, peeled and thinly sliced
1/4 Cup apple juice
4 Peaches cut in half, pits removed
1 Tablespoon brown sugar
2 Burratas
1 Small boxed container of arugula, rinsed and spun dry
2 Tablespoons balsamic vinaigrette
Balsamic glaze
4 Toufayan Flat Bread
Directions
- Place the sliced onions in a large frying pan set over medium heat. Cook until onions are soft. Add the apple juice and continue cooking until apple juice has been absorbed and onions are fully caramelized. Remove from heat and allow to cool slightly.
- Place the sliced peaches on a tray flesh side up. Sprinkle with brown sugar and set to the side. Heat grill to 350º. Once grill is hot, place peaches flesh side down on the grates and allow to cook for 4 to 5 minutes or until peaches start to caramelize. Flip peaches and grill once again skin side down for 4 to 5 minutes or until peaches have softened. Remove from grill and allow to cool.
- Place the flare breads directly on the grill and cook for 3 to 4 minutes or until a slight char forms. Flip and do the same on the other side. Remove from grill and place on a serving tray.
- Toss your arugula with the balsamic vinaigrette then place on the flat bread, then top with caramelized onions. Cut each half of grilled peach in half. Place two to three pieces on the flat bread. Cut burrata in half and place on the flat bread. Drizzle with the balsamic glaze then serve.
