I’m always trying to find a dish that can be made quickly but is also delicious. This dish fits the bill. Not only is it delicious and easy to make, it is a one pot meal so clean up is a breeze. With our lives getting so busy these days, its nice to have a home cooked meal that wont take hours to prepare and clean up from.
For this dish I suggest you use a large Dutch oven. I love my Le Creuset. It is one of my favorite pots to cook in. I suggest everyone invest in one good pot such as this one. They can be a little pricy but so worth it.
Your in a rush, so lets just get to it.
How To Make Gemelli With Sausage & Fire Roasted Tomatoes:
In a large Dutch Oven heat olive oil at medium heat.
Add chopped onion and sauté until translucent. Add garlic and cook an additional two minutes.
Add sweet Italian ground sausage. Using a wooden spoon break up the sausage into crumbles and cook until browned and cooked through. Deglaze the pot with white wine and cook for an additional three to five minutes until alcohol is cooked out.
Add broth and one pound of Gemelli pasta, stir and cover with a lid and let cook for 15 minutes.
Once the liquid is absorbed and pasta is done, add the fire roasted tomatoes and stir.
Add chopped basil and some grated Parmigiano Reggiano cheese, stir and serve.

Gemelli Pasta With Sausage & Fire Roasted Tomatoes:
Ingredients:
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Large Sweet Onion Chopped
- 2 Garlic Cloves Minced
- 1 Pound Italian Sweet Sausage
- 1/2 Cup White Wine
- 3 1/2 Cups Low Sodium Chicken Broth
- 1 Pound Gemelli Pasta
- (1) 14.5oz Can Fire Roasted Tomatoes
- 1 Cup Chopped Fresh Basil
- 1/2 Cup Grated Parmigiano Reggiano Cheese, ( Extra For Serving )
Instruction:
Heat olive oil in a large Dutch Oven over medium heat. Add chopped onions and cook until translucent. Add minced garlic, stir together and cook an additional two minutes.
Add ground sausage to the onion and garlic. Using a wooden spoon, break up the sausage into crumbles and cook until brown and cooked through.
Pour in white wine to deglaze the pot and cook an additional three minutes to cook out the alcohol. Add the broth and the raw pasta and stir to incorporate. Cover pot and let cook for 15 minutes or until liquid has been absorbed and pasta has cooked through.
Add the Fire Roasted Tomatoes and toss to combine. Chop basil and add to pot along with grated cheese and stir to combine.
When serving place in a bowl and garnish with extra grated cheese. Enjoy!
