What Is Frisee
Frisée, also known as curly endive, is a mildly bitter, leafy green that has a peppery flavor. The outer leaves are green while the inner leaves have a pale yellow color. The leaves are crunchy and bring lots of texture to any salad.
Frisée has very few calories but is packed full of healthy nutrients. It contains several vitamins such as vitamin A, vitamin C and vitamin K. These vitamins have health benefits that promote healthy eyesight, help with blood clotting and bone health and act as antioxidants to support your immune heath and with very few calories, its a win, win.
How To Make Frisée Salad With Citrus Vinaigrette
It all starts with a nice head of Frisée. The narrow curly leaves should be dark green on the outside and a pale yellow on the inside.
Remove any wilted or damaged leaves from the head. Starting at the base, gather the leaves together working your way to the top. Using a sharp knife, cut the leaves into 1 to 2 inch pieces. Rinse and drain leaves using a salad spinner, making sure all the moisture is removed from the leaves. Place the dried leaves into a large bowl.
Add a chopped shallot, 1 large segmented orange and 4 to 5 celery sticks diced. Toss with the Frisée leaves until incorporated.
How To Make Citrus Vinaigrette
In a small bowl combine olive oil, fresh squeezed orange juice, fresh squeezed lemon juice, 1 medium sized shallot minced, pure maple syrup, Dijon mustard, salt and pepper and whisk to combine.
Serve in a small bowl on the side of the salad.
How To Serve Frisée Salad With Citrus Vinaigrette
Place salad greens on a serving dish. Drizzle with a small amount of Citrus Vinaigrette.
Top with shaved Parmesan Cheese and toasted sliced almonds and serve with extra Vinaigrette on the side,
Frisee Salad With Citrus Vinaigrette
Ingredients:
Salad:
- 1 Large head of Frisée chopped, rinsed and dried
- 1 Medium shallot thinly sliced
- 1 Large orange segmented
- 4 To 5 Celery sticks diced
- 1/4 Cup Sliced almonds toasted
- Shaved Parmesan Cheese
Instructions:
- Place prepared frisee, shallots, celery and orange segments into a large bowl and toss with a small amount of vinaigrette to coat. Pour into a serving dish and top with toasted almonds and shaved Parmesan Cheese.
- Enjoy.
Citrus Vinaigrette:
- 1 Cup of olive oil
- 2/3 Cup fresh squeezed orange juice
- 1/4 Cup fresh squeezed lemon juice
- 1 Medium shallot minced
- 1 1/2 Tablespoons pure maple syrup
- 2 Teaspoons Dijon mustard
- Pinch of salt and pepper
Instructions:
- Place all ingredients into a medium bowl and whisk until combined. Pour into a serving bowl.
