Freeze Dried Strawberry Cookies

These cookies are a Strawberry Explosion. With the addition of freeze dried strawberries in the dough and sprinkled on top of a glaze that is flavored with strawberry extract, there is no mistaking that you are eating a strawberry flavored cookie.

If you’re a strawberry lover, then these cookies are for you. They have a strong strawberry flavor that comes from the addition of freeze dried strawberries that have been ground into a powder and incorporated in the dough. The cookie is then drizzled with a glaze that is flavored with strawberry extract then once again sprinkled with bits of freeze dried strawberries. Another words, the perfect strawberry bite.

A Strawberry Expoltion!

Ingredients

  • 2 1/2 Cups all purpose flour

  • 1/2 Teaspoon baking powder

  • 1/4 Teaspoon salt

  • 1 Cup (2 sticks) unsalted butter at room temperature

  • 1 1/2 Cup granulated sugar

  • 1 Egg

  • 2 Teaspoons pure vanilla extract

  • 4 Tablespoons freeze dried strawberries powder

  • 10 to 15 Drops of red food coloring

  • 1/4 Cup powdered sugar

  • 1 Tablespoon milk

  • 1/4 Teaspoon strawberry extract

  • 1 Tablespoon finely chopped freeze dried strawberries

Directions

  • Preheat the oven to 350º. Line a baking sheet with parchment paper and set to the side.
  • To a large mixing bowl, whisk together the all purpose flour, baking powder and salt until combined, then set to the side.
  • To the bowl of a stand mixer fitted with a paddle attachment, beat the softened butter and 1 1/4 cups granulated sugar until smooth and creamy. Add the egg and pure vanilla extract and continue mixing until combined.
  • Add the flour mixture and beat until just combined. Mix in 3 tablespoons of freeze dried strawberry powder and the food coloring until dough is an even pink color.
  • Whisk together the remaining 1/4 cup of granulated sugar and 1 tablespoon of freeze dried strawberry powder in a small bowl.
  • Scoop out the dough using a small ice cream scoop. Roll dough ball in the palm of your hands to make smooth. Roll the smooth dough balls in the sugar and strawberry powder mixture until coated. Place each ball on the prepared baking sheet 2” apart. Place in preheated oven and bake for 8 minutes or until edges are slightly golden. Remove from oven and allow to cool completely on a wire rack.
  • Meanwhile make the strawberry drizzle. To a small mixing bowl, whisk together the powdered sugar, milk and strawberry extract until completely combined and of drizzle consistency. Drizzle the tops of the cooled cookies and top with a sprinkle of freeze dried strawberries. Let sit until drizzle is set then serve.
