I love the flavor of an everything bagel. I also enjoy a crispy potato, so I decided to put them together and form the Everything Bagel Potato Fry. Now I have to say I am not big on fried foods, in fact I have never actually fried anything. So I needed to figure out how to get the crispy texture of a French Fry without actually frying it.
The best potato for this is a russet potato ( also known as an Idaho potato ) because it is a denser potato and they have the least amount of moisture which will make for a crispier potato.
Potatoes want to turn brown once they are cut and exposed to the air. To prevent this from happening fill a large pot with cold water and squeeze in the juice of one small lemon. The acid in the lemon will prevent your potatoes from turning brown.
While prepping your potatoes pre heat your oven to 400º.
You will want to soak your potatoes for at least 20 minutes. This will remove the excess starch which in turn make for a more crisp potato. Rinse potatoes until water runs clear and place on a clean kitchen towel to dry. Wipe your bowl dry and place the potatoes wedges in the bowl with two tablespoons of olive oil. Season potatoes with your Everything Bagel spice and toss to coat.
Line a baking sheet with parchment paper. Place potato wedges skin side down on the sheet, making sure not to over crowd them. Sprinkle each wedge with some extra Everything Bagel spice mix and place in the pre heated oven at 400º for 30 minutes or until they are brown and crispy on all sides.
While waiting for your potatoes to cook you can prepare you spicy ketchup.
Spicy Ketchup:
Ingredients:
- 1/2 Cup Ketchup.
- 1/2 Teaspoon chile powder.
- 1 Teaspoon onion powder.
- 1 Teaspoon garlic powder.
Directions:
- In a small bowl place ketchup and spices and mix well.
Once you remove them from the oven serve immediately with the spicy ketchup. These potatoes come out crispy and delicious and not a fryer in sight.
Baked Everything Bagel Potato Fries:
Ingredients:
- 2 Lbs. Russet potatoes ( Idaho Potatoes ).
- 1 Small lemon juiced.
- 2 Tablespoons olive oil.
- Everything Bagel Seasoning mix.
Directions:
- Pre heat oven to 400º.
- Scrub potatoes under cold water to clean.
- Fill a large bowl with cold water and Lemon juice.
- Slice potatoes into wedges and place in cold water and lemon juice and let soak for at least 20 minutes.
- Remove potatoes from water and pat dry with a clean kitchen towel. Dry bowl and return potatoes to bowl.
- Coat potatoes with olive oil and 2 tablespoons of Everything Bagel seasoning or more if needed.
- Line a baking sheet with parchment paper and place potatoes skin side down on parchment paper
- Place in pre heated oven and bake for 30 minutes or until golden brown on all sides. Serve immediately.
