This Coffee Cake Banana Bread is super moist and delicious. The cake has great banana flavor while the sweet crunchy topping gives you the taste of traditional coffee cake. All together its the perfect bite.
You know when you have a couple of bananas that ripen before you can eat them? I know that happens in my house. Now some people think that a banana with brown spots isn’t good anymore but that couldn’t be father from the truth. When they are like this, they are super sweet and perfect for freezing for smoothies, making Banana Pancakes or making Banana Bread.
Looking at my monkey banana holder I noticed I had a couple of bananas that were starting to get to this point so I was thinking Banana Bread would be a good choice.
Now I didn’t want to make the same old Banana Bread that I always make, I wanted to change it up a bit. My family really enjoys a good coffee cake, so I thought, why not put a coffee cake topping on a already yummy Banana Bread. Well it was a success. So much so that the loaf was gone within an hour.
How To Make Coffee Cake Banana Bread
Now for this recipe you are going to want to use very ripe bananas. If your Bananas have brown spots on them, they are perfect. This is when your bananas are at there sweetest.
Preheat oven to 350º.
To a large bowl add flour, baking soda, baking powder, salt and cinnamon, whisk until combined and set aside.
Place bananas on a plate and mash with a fork.
To a separate large bowl add mashed bananas, avocado oil or vegetable oil, brown sugar, vanilla extract, eggs and buttermilk. Mix to combine.
NOTE: If you don’t have buttermilk at home as I often don’t, just make your own. To 1 cup of milk add 1 tablespoon of white vinegar or lemon juice. Gently stir and let sit for 5 minutes, this will allow the milk to slightly curdle, giving it a buttermilk like texture and taste.
Pour banana mixture over flour mixture and gently fold ingredients together, being careful not to over mix.
Pour mixture into loaf pan and set aside.
For the coffee cake topping, in a small bowl combine 1/2 cup flour, 1/2 cup brown sugar, 1/4 cup unsalted butter cut into small pieces and 1 1/2 teaspoons cinnamon. Mix with a pastry cutter or a fork and sprinkle on top of banana bread batter.
Place in preheated oven and bake for 40 to 45 minutes. Remove from oven and let cool. Cut into slices and serve.
This a great way to use your over ripe bananas. It’s a snack that your whole family will love.
Coffee Cake Banana Bread
Ingredients:
Batter:
- 1 1/2 Cups all purpose flour.
- 1 Teaspoon baking soda.
- 1 Teaspoon baking powder.
- 1 Teaspoon salt.
- 1 Teaspoon cinnamon.
- 3 Or 4 medium ripe bananas.
- 3/4 Cup avocado oil or vegetable oil
- 1/2 Cup brown sugar.
- 1 1/2 Teaspoon pure vanilla extract.
- 2 Large eggs at room temperature.
- 1/3 Cup buttermilk.
Coffee Cake Topping:
- 1/2 Cup all purpose flour
- 1/2 Cup brown sugar
- 1/4 Cup butter cut into small pieces
- 1 1/2 Teaspoons cinnamon
Instructions:
- Preheat oven to 350º. Spray a 9” loaf pan with cooking spray and set aside..
- In a large bowl whisk together the 1 1/2 cup flour, baking soda, baking powder, salt and 1 teaspoon cinnamon. Set aside.
- Mash bananas on a plate and place in a medium bowl. Add oil, brown sugar, vanilla extract, eggs and buttermilk and stir to combine.
- Gently stir banana mixture into the dry ingredients. Stir until just combined, making sure no dry flour is visible. Pour into prepared loaf pan.
- In a small bowl combine 1/2 cup flour, 1/2 cup brown sugar and 1 1/2 teaspoons of cinnamon, whisk to combine. Add butter and combine using a pastry cutter or a fork. Once fully combined, sprinkle on banana bread batter,
- Place in preheated oven and bake for 40 to 45 minutes or until toothpick inserted in the center comes out clean. Let cool on a wire rack then serve.
