Clementine Cake

Clementine Cake is a sweet, moist, tender cake that is loaded with bright Clementine flavor. The perfect treat to end any meal.

Every year starting around October these little Orange beauties pop up in the grocery stores. Most of us know them as “Cuties” the perfect name. They are actually called Clementines. They are small sweet juicy oranges that are easy to peel, typically seedless and make a great on the go snack.

My Family loves Clementines, in fact they could probably eat them by the dozens. I mean who wouldn’t love these sweet little juicy treats. So from October until late February, (there peak season) you can always find a bunch in my house.
Every year for Valentine’s Day I make a special dessert (of their choice) for each one of my kids and of course my husband. My one son is easy, every year he wants the same thing, Rice Pudding. My husband, also very easy, loves a good Brownie. Now my other son is different, he loves to give me a good challenge, so every year it’s something different. I must say, I do enjoy the challenge. This year the movie The Secret Life Of Walter Mitty just happened to be on. If you have ever seen that movie you would know that Clementine Cake plays a significant roll in the movie. So needless to say, that was his choice this year and I must say it was a good one. This cake was loaded with sweet Clementine flavor. Between the fresh squeezed Clementine juice and zest that are incorporated in the cake and the candied Clementine’s that decorate the top, there was no mistaking what kind of cake it was. All in all it was a great success. Wonder what next year will bring?🤔

How To Make Candied Clementine’s

  • 4 Clementine’s
  • 1 Cup granulated sugar
  • 1 Cup water

Instructions:

Place water and sugar in a large skillet over medium heat and cook until sugar is completely dissolved. Meanwhile, using a very sharp knife, slice the Clementine’s, skin and all, into very thin slices. Once the sugar has dissolved, place the slices into the skillet, trying not to overlap any. Allow the slices to cook for 45 minutes. Remove from liquid and place on a wire rack to cool and dry out.

This Clementine Cake is sweet and tender and loaded with bright Clementine flavor.

Ingredients

  • 1/2 Cup (1 stick) unsalted butter, at room temperature

  • 1 Cup granulated sugar

  • 2 Eggs

  • 1 1/2 Cup all purpose flour

  • 1 Teaspoon baking powder

  • Zest of 6 Clementine’s

  • 1/3 Cup Clementine juice

  • 1/2 Cup plain greek yogurt

  • 1 1/2 Teaspoon pure vanilla extract

  • 1/4 Teaspoon almond extract

  • 1/4 Teaspoon salt

  • For The Glaze
  • 3/4 Cup powdered sugar

  • 2 Tablespoons heavy cream

  • 1 Tablespoon very soft butter

  • 1 to 2 Tablespoons Clementine juice

  • 1/2 Teaspoon pure vanilla extract

  • Candied Clementine’s

Directions

  • Preheat oven to 350º. Spray a 9”x5” loaf pan with baking spray then line with a sheet of parchment paper. Set to the side
  • To a medium sized mixing bowl, whisk together the all purpose flour, baking powder and salt until combined. Set to the side.
  • To the bowl of a stand mixer fitted with a paddle attachment, cream the butter and granulated sugar together until smooth. Add the eggs one at a time, mixing after each addition. Add the clementine zest and mix to combine.
  • To a small bowl, whisk together the plain greek yogurt, vanilla extract, almond extract and clementine juice until combined. Add the flour mixture and the yogurt mixture to the butter mixture alternating between both, starting and ending with the flour mixture, until completely combined.
  • Pour batter into the prepared loaf pan. Place in the preheated oven and bake for 40 to 45 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool slightly before removing from the pan. Place on a wire rack to cool completely.
  • Meanwhile you can make the glaze. To a small bowl, whisk together the powdered sugar, soft butter, heavy cream, fresh squeezed clementine juice and pure vanilla extract until smooth. Drizzle the cooled cake with the glaze and spread to coat. Top with candied Clementine’s and allow to set, then serve
