I always prefer to use glass mixing bowls due to the fact that acidic ingredients do not react with the glass which could change the flavors in your recipe. They are also microwave safe and easy to clean.
- Mini Food Processor: Perfect for when you need to chop nut or in this case pulverize the freeze dried raspberries.
- Fine Mesh Strainer: I find that this is the best way to remove all the seeds from the pulverized raspberries.

Ingredients
1 1/4 Cups Semi Sweet Chocolate Chips
3/4 Cup heavy whipping cream
1 Bag (1.2 oz.) freeze dried raspberries, pulverized + more for decorating.
1 Teaspoon Coconut Oil
Directions
- Place semi sweet chocolate chips in a medium sized mixing bowl, set to the side.
- Pour heavy whipping cream into a microwave safe bowl and microwave until very warm about one minute. It should be hot to the touch but do not bring to a boil. Remove from the microwave and immediately pour over chocolate chips. Let sit for 2 minutes without stirring . After the two minutes, stir together until smooth.
- Place freeze dried raspberries in the bowl of a food processor and pulse until pulverized. Pour pulverized raspberries through a fine mesh strainer to remove any seeds. Add the raspberry powder to the chocolate and stir to incorporate. Place the bowl in the refrigerator to chill for 1 hour.
- Line a baking sheet with parchment paper and set to the side. Remove the chocolate ganache from the refrigerator. Using a small ice cream scoop, scoop out 1” sized balls of the chocolate ganache. Smooth the balls between the palms of your hands and place them on the prepared baking sheet. Place them in the refrigerator to chill once again.
- Meanwhile place the bittersweet chocolate and coconut oil in a heat proof bowl. Place the bowl over a pot of simmering water and stir until melted and smooth. Remove from heat and allow to cool slightly.
- Dip each truffle in the melted chocolate and return to the baking sheet. Drizzle more chocolate on top of the truffles then sprinkle with crushed freeze dried raspberries.
