I have been making this Chocolate Peanut Butter Date Bark for years and now I see it everywhere on the internet as a new trendy way to have a chocolate bar, without all the guilt. I love that I was being trendy before this was actually a trend. Years ago, my kids just wanted to be like the other kids and have a “real” chocolate bar, not realizing that this Chocolate Peanut Butter Date Bark, was way more real then any store bought chocolate bar. It is loaded with all natural ingredients without any preservatives or things you can’t even pronounce. Just dates, peanut butter, peanuts and chocolate all brought together to form this delicious treat.

Ingredients Needed To Make This Chocolate Peanut Butter Date Bark

  • Medjool Dates: The chewy texture of Medjool Dates works perfectly to mimic caramel. They are not only naturally sweet and delicious but they are also loaded with fiber and disease fighting antioxidants. Just make sure you remove the pits before using or you can purchase pitted dates.
  • Peanut Butter: I always like to opt for an all natural peanut butter. One without added sugar or palm oils.
  • Dry Roasted Peanuts: For a little added crunch.
  • Bittersweet Chocolate Chips: I love the deep rich flavor of bittersweet chocolate but if you prefer semi sweet, that will work as well.
  • Coconut Oil: A small amount will help thin out the chocolate, giving it a more pourable consistency.

Tips For Making Date Bark

  • Line Your Tray: You are going to want to line your tray with a piece of Parchment Paper. This will prevent sticking and will also make clean up a breeze.
  • Dates: It is best to use fresh dates. You want them soft and juicy. If your dates are too hard, soak them in hot water for 5 minutes then drain and dry them before using
  • Flattening The Dates: Once you have all the dates lined up, cover them with another piece of parchment paper. Using a bit of pressure, roll over them with a rolling pin as to flatten them out.
  • Peanut Butter: You want your peanut butter to be of spreadable consistency. If it is not, then place it in the microwave safe bowl and microwave for 20 seconds until consistency is reached.

How To Store This Date Bark

This is a great snack to have on hand for a quick pick me up or a school lunch box treat. To store it, just cut up bark into squares and store in an air tight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.

Flavor Variations

  • Different Nuts: Feel free to substitute peanuts with the nut of your choice, such as walnuts, almonds or pistachios.
  • Swap The Peanut Butter: If you don’t like peanut butter then swap it out for a different nut butter, like almond or cashew butter.
  • Add Some Dried Fruit: You can also add bits of dried fruit on the top, like sweetened dried cranberries, raisins or even dried cherries, for a bit of extra chewiness.
