These Chocolate Palmier Cookies are a buttery cookie that is rolled with a generous amount of rich chocolate filling. Perfect to satisfy anyone’s sweet tooth.
Chocolate Palmier Cookies
Ingredients:
- 1 oz. Package cream cheese, at room temperature
- 1/2 Cup Powdered sugar
- 1/4 Cup unsweetened cocoa powder
- 2 Tablespoons all purpose flour
- 2 Tablespoons of coffee liqueur or strong brewed coffee
- 1/2 Cup butter, at room temperature
- 1/2 Cup granulated sugar
- 1/2 Cup brown sugar
- 1/2 Teaspoon baking powder
- 1/2 Teaspoon ground cinnamon
- 1/4 Teaspoon salt
- 1 Egg
- 3 Tablespoons milk
- 1 Teaspoon pure vanilla extract
- 2 3/4 Cups all purpose flour
Instructions:
- For filling, place cream cheese, powdered sugar, cocoa powder, 2 tablespoons flour and the liqueur in a medium sized mixing bowl. Using a hand mixer, beat at medium speed until smooth.
- To the bowl of a stand mixer fitted with a paddle attachment, beat butter on medium speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, cinnamon and salt. Beat until combined, scraping the sides of the bowl as necessary. Beat in egg, milk and pure vanilla extract until combined. Add the 2 3/4 cups of flour and beat to combine. Divide dough in half. Wrap each half in plastic wrap and chill for 30 minutes or until easy to handle.
- On a lightly floured surface roll half of the dough into a 12“ x 8“ rectangle. Spread half of the filling over the dough rectangles, spreading to within 1/2 inch of each edge. Roll up the dough, starting at the long edges to meet in the center. Brush water on the seam where the dough spirals meet, lightly pressing together. Repeat with the remaining dough and filling. Wrap each roll in a piece of plastic wrap. Place in the refrigerator and chill for four hours or until dough is firm enough to slice.
- Preheat oven to 375°. Line a baking sheet with parchment paper and set to the side. Remove rolls from the refrigerator. Cut rolls into 1/4 inch slices. Please slices 2 inches apart on the prepared cookie sheet. Play in the preheated oven and bake for eight minutes or until edges are firm and bottoms are lightly browned. remove from oven and transfer Cookies to a wire rack to cool.
