Ingredients
1/2 Cup unsalted butter
1/2 Cup Brown Sugar
1/2 Cup Granulated Sugar
2 Eggs
1 Cup All Purpose Flour
1/4 Cup Unsweetened Cocoa Powder
1 Teaspoon baking powder
1 Teaspoon Espresso Powder
1/4 Teaspoon salt
Directions
- Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
- Place the butter and chocolate in a small bowl set over simmering water and stir occasionally until all is melted and combined. Set to the side to cool.
- In a separate large mixing bowl beat both sugars and eggs with a hand mixer until light and fluffy slowly pour in the melted chocolate mixture and beat to combine.
- To a separate bowl whisk together the flour, cocoa powder, baking powder, espresso powder, and salt until incorporated. Pour it into the wet ingredients and blend until combined.
- Scoop out dough using a small ice cream scoop and place 2 inches apart on the prepared baking tray (they will spread). Place in the preheated oven and bake for 10 to 12 minutes or until edges are firm.
