Chocolate Crepe Cake

Once the Spring and Summer months roll around, I enjoy having small get togethers, but not for dinner and drinks but for Brunch. It is one of my favorite meals. It’s low key and always satisfying. The best part about doing it in the warmer months is that you are able to bring it outdoors to enjoy the weather. Since I tend to have a few Brunch get togethers a year, I like to change things up a bit, serving something different every time. Now Crepes are usually a staple at my Brunch get togethers. They are light and versatile and everyone seems to enjoy them. So I was thinking, how do I incorporate Crepes into my Brunch menu but in a different way. That is when this Chocolate Crepe Cake came to mind. It has the tender layers of Crepes and the delicious flavor of creamy chocolate whipped cream, but instead of serving individual portions, I stacked them into a visually appealing cake that made the perfect addition to my Brunch table.

The best part is that Crepes are simple to make. With very few ingredients (that you probably already have) you can have this cake made in no time.

What You Need To Make A Chocolate Crepe Cake

  • Eggs: I use cage free organic eggs. In my opinion, cafe free eggs have more flavor.
  • Milk: I used 2%
  • Butter: I would go with unsalted so that you can control the amount of salt in your recipe.
  • Granulated Sugar: For added sweetness.
  • Vanilla Extract: I always opt for the pure vanilla extract rather than the imitation vanilla extract. A bit more pricy but you can’t beat that bold flavor.
  • All Purpose Flour:
  • Unsweetened Cocoa Powder: I like a Double Dark Unsweetened Cocoa. It brings deep chocolate flavor to your recipes.
  • Espresso Powder: I always add Espresso Powder to chocolate dishes. Espresso Powder will enhance the chocolate flavor.
  • Salt:
  • Heavy Whipping Cream:
  • Powdered Sugar:
  • Fresh Berries: Strawberries, blueberries, raspberries and currants.

This Chocolate Crepe Cake has tender crepes that are layered between a smooth chocolate whipped cream then topped with berries. The perfect addition to any Brunch table.

Ingredients

  • For The Crepes
  • 2 Cups milk

  • 4 Eggs

  • 3 Tablespoons unsalted butter, melted

  • 3 Tablespoons granulated sugar

  • 2 Teaspoons pure vanilla extract

  • 1 1/2 Cups all purpose flour.

  • 1/4 Cup unsweetened cocoa powder

  • 1 Teaspoon espresso powder

  • 1/2 Teaspoon salt

  • Chocolate Whipped Cream:
  • 2 Cups heavy whipping cream

  • 3 Tablespoons unsweetened cocoa powder

  • 3 Tablespoons powdered sugar

  • 2 Teaspoons espresso powder

  • 1 Teaspoon pure vanilla extract

Directions

  • To make the Crepes, place the milk, eggs, sugar, vanilla, flour, cocoa powder, espresso powder and salt in a blender. Blend ingredients for about 20 seconds or until batter is smooth. Chill batter for 30 minutes
  • Place a 8” non stick frying pan over medium heat. Pour 1/4 Cup of chilled batter in the center of the pan. Tip the pan to spread the batter around the pan.. Cook for 1 to 2 minutes then flip. Cook an additional 1 minute then remove and place on a plate. Continue cooking the rest of the crepes. for this recipe I used 20 crepes.
  • To make the chocolate whipping cream, place the heavy cream, cocoa powder, powdered sugar, espresso powder and vanilla extract into the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed until stiff peaks form.
  • To assemble, place one crepe on a serving dish then cover with whipped cream. Repeat this four mor times. Place a layer of sliced strawberries on top to cover. Continue layering the crepes and whip cream for another 5 layers. Then top with sliced strawberries to cover. Continue layering the crepes and the whip cream for another 5 layers. Then top with sliced strawberries. Top with the last 5 layers of crepes and whip cream..
  • Using a star tip, pipe whip cream in the center of the crepe. Top with fresh berries and serve.
