Ingredients
- Almond Flour Base
1 Cup Almond Flour
3 Tablespoons Pure Maple Syrup
2 Tablespoons Avocado Oil
1 Teaspoon Pure Vanilla Extract
Pinch of salt
- Pistachio Filling
1 1/2 Cups Raw Pistachios + more for decorating
1 Tablespoon pure maple syrup
2 Teaspoons avocado oil
Pinch of salt
- For The Chocolate Coating
1 Teaspoon Coconut Oil
Directions
- Preheat oven to 350º.
- To a large mixing bowl combine the almond flour cookie base ingredients together until a dough is formed. Press about 1 tablespoon of dough to the bottom of a mini silicone muffin tray. Place in the preheated oven and bake for 8 to 10 minutes. Remove from oven and allow to cool completely. Do not remove cookies from the tray.
- Meanwhile, to the bowl of a food processor, add the pistachio filling ingredients and pulse for 2 to 3 minutes until a thick paste forms. Place a small amount over the cooled cookie, filling each one to the top. Press down to compact. Place tray in the freezer for one hour to set.
- Place chocolate chips and coconut oil in a microwave safe bowl and microwave in 30 second intervals, stirring occasionally until smooth.
- Remove cups from the muffin tray and dip each one in the melted chocolate. Place on a parchment lined tray and sprinkle with chopped pistachios. Return to the freezer to set.
