This Chocolate Chip Zucchini Bread is sinfully good. It is super moist and tender and loaded with flavor. Don’t even tell them it has vegetables in it, they will never know.
Love being able to sneak some vegetables into a tasty snack and zucchini is the perfect vegetable for this. The zucchini in this bread adds a ton of moisture and the perfect amount of texture but will not change the taste. So they wont even know they are eating there vegetables. In fact the addition of the bittersweet chocolate chips will have them coming back for more.

Ingredients used to make this bread:
- Zucchini: Shred on the small setting of a box grater. No need to peel the zucchini, grate them skin and all.
- Avocado Oil: I use avocado oil for its health benefits but vegetable oil will work as well.
- Brown Sugar & Granulated Sugar: Both are for added sweetness. I like to use dark brown sugar for the added molasses flavor, but light brown sugar will work as well
- Eggs: These are your binder.
- Flour: All purpose flour works perfectly for this recipe.
- Baking Powder & Baking Soda: These are leavening agents which help to give this bread rise.
- Cinnamon: Adds a bit of spicy flavor.
- Vanilla Extract: I prefer pure vanilla extract rather than imatation vanilla extract due to its intense flavor.
- Salt: A pinch of salt will enhance the flavor.
- Chocolate Chips: Bittersweet chocolate chips are perfect for this but semi sweet chocolate chips will work as well.
Tips for making this Bread:
- Shred the zucchini with a box grater. No need to peel first, use the skin and all.
- For this recipe I used a 9” x 5” loaf pan that was coated with baking spray for easy removal.
- I like to add a couple of extra chocolate chips on top of the cake before I bake it. It gives it great presentation.
- To store, once cooled place in an air tight container for up to a week, but I guarantee it wont last that long.

Ingredients
1 1/2 Cup all purpose flour
1 Teaspoon baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon salt
2 Teaspoons ground cinnamon
1/2 Cup avocado oil or vegetable oil
3/4 Cup brown sugar, light or dark.
1/4 Cup granulated sugar
2 Eggs
1 Teaspoon pure vanilla extract
1 Cup bittersweet chocolate chips, plus more for topping.
Directions
- Preheat the oven to 350º. Spray a 9” x 5” loaf pan with baking spray and set to the side.
- To a large mixing bowl, whisk together the all purpose flour, baking powder, baking soda, salt, and ground cinnamon until combined. Set to the side.
- To a separate large mixing bowl, whisk together the brown sugar, granulated sugar, avocado oil, eggs and vanilla extract until completely combined. Pour into the dry ingredients and using a rubber spatula, mix to combine. Fold in the chocolate chip until incorporated.
- Pour batter into prepared loaf pan. Top with extra chocolate chips. Place pan in the preheated oven and bake for 50 to 55 minutes or until toothpick inserted in the center comes out clean. Remove from heat and allow to cool slightly before removing from pan. Slice and serve.
