This Cherry Plum Cake is a great summer dessert, with its tender moist cake and sweet juicy plums, its the perfect ending to any meal.
Summer is a great time for fresh fruit. I love the varieties that are available this time of year, from the peaches and nectarines to the melons and sweet berries. It is the perfect time to add these sweet fruits to recipes.
One of the fruits I really enjoy eating in the summer are plums. They are sweet and juicy and have great flavor. Now normally I would just grab a regular sized plum that we are all familiar with, but a couple of years ago I became familiar with this other variety of plum called a cherry plum, so I thought I would give it a try. Now cherry plums, when eaten raw do not have the same sweetness as a regular plum, rather, they have a slight tartness to them, almost like a green apple, but when these plums are cooked there tartness seems to fade away and they become sweet and juicy. Now don’t get me wrong I really enjoy them uncooked as well, they are quite tasty, but because I was looking to make a plum cake I thought these would be the perfect plums to use.
So the next time your at the store and you see some cherry plums, give them a try, they really are great eaten as is or baked.
How To Make Cherry Plum Cake:
Preheat oven to 350º. Spray a 8” x 8” baking dish with cooking spray and set to the side.
In a large mixing bowl whisk together the all purpose flour, granulated sugar, baking powder, salt and cinnamon, then set to the side.
In a separate medium bowl combine the plain greek yogurt, milk, egg, melted butter, almond extract and vanilla extract, whisk together to combine.
Pour the wet ingredients into the dry ingredients and mix to combine.
Pour batter into prepared baking dish and spread in an even layer.
Prepare your plums by rinsing and drying them. Cut each cherry plum in half and remove the pits. Place each plum half, skin side down in the batter in rows until entire top is covered, pressing the plum halves down slightly.
Melt butter in a microwave safe dish. Add fresh squeezed lemon juice and drizzle over the plums. Sprinkle with granulated sugar then place in preheated oven and bake for 20 – 25 minutes or until top becomes a golden brown and toothpick inserted in the center comes out clean. Remove from oven and allow to cool before serving.
Serve with a dollop of whipped cream.
Cherry Plum Cake
Ingredients:
- 1 1/2 Cups all purpose flour
- 3/4 Cup granulated sugar
- 2 Teaspoons baking powder
- 1/4 Teaspoon salt
- 1/2 Teaspoon ground cinnamon
- 1/3 Cup plain greek yogurt
- 1/3 Cup milk
- 1/4 Cup melted butter
- 1 Egg
- 1 Teaspoon almond extract
- 1 Teaspoon vanilla extract
- Juice of 1/2 a lemon
- 1 Tablespoon melted butter
- 2 Tablespoons granulated sugar
- 14 To 16 Cherry Plums cut in half and pitted
Instructions:
- Preheat oven to 350º. Spray a 8” x 8” baking dish with cooking spray then set to the side.

- To a separate medium bowl add the plain greek yogurt, milk, egg, the 1/4 cup of melted butter, almond extract and vanilla extract and stir to combine.
- Pour the wet ingredients into the dry ingredients and stir to combine. Pour the batter into prepared baking dish and spread in an even layer. Place the prepared plums skin side down in layers in the top of the batter and press in slightly.
- Combine the tablespoon of melted butter and the lemon juice in a small bowl. Pour butter mixture over the plums and sprinkle with granulated sugar.
- Place the baking dish in the preheated oven and bake for 20 to 25 minutes or until golden brown on top and toothpick inserted in the center comes out clean. Remove from oven and allow to cool before serving. Once cooled serve with a dollop of fresh whipped cream.
