These Cherry Chocolate Chocolate Chunk Cookies are moist and tender. They are super chocolatey with a hint of bright cherry flavor. The perfect treat when you are in the mood for something rich and decadent.
Every year in early July when the cherries start to show up at the stores, I pick up a bunch and bring them home and put them in a big bowl that I leave on the counter for easy snacking. When that bowl comes out, my family is more then happy to grab one here and there while passing by. Needless to say by the end of the day, that bowl is empty. I have to admit I have my fare share of them as well. Just recently after having one of those cherries I just happen to have a bite of dark chocolate, which made me think how great it would be to put these two yummy flavors together. That’s when I decided to make the Cherry Chocolate Chocolate Chunk Cookie, and I must say it was a success.
How To Make Cherry Chocolate Chocolate Chunk Cookies:
To the bowl of a stand mixer fitted with a paddle attachment mix together the room temperature butter, brown sugar and granulated sugar and mix until fluffy.
Add the eggs and pure vanilla extract and once again mix until smooth.
To a separate large mixing bowl whisk together the all purpose flour, unsweetened cocoa powder, baking soda, baking powder and salt.
Pour the dry ingredients into the wet ingredients and mix on low speed to combine.
Rinse and drain the cherries. Remove the pits and chop into small pieces. Pour the cherries into the mixer. Chop the chocolate into chunks and add to the mixer as well. Mix on low speed until just combined, do not over mix. Wrap dough in plastic wrap and chill for 30 minutes.
Preheat oven to 350º and line a baking sheet with parchment paper.
Remove cookie dough from the refrigerator and scoop out the dough using a medium sized ice cream scoop. Place scoops of cookie dough on prepared baking sheet. Top each cookie with 2 to 3 chunks of chocolate and place in the preheated oven to bake for 15 to 18 minutes. Remove from oven and allow to cool on a wire rack before serving.
Cherry Chocolate Chocolate Chunk Cookies
Ingredients:
- 1/2 Cup unsalted butter (1 stick) at room temperature
- 1/2 Cup granulated sugar
- 1/2 Cup brown sugar
- 1 Large egg
- 2 Teaspoons pure vanilla extract
- 1 1/2 Cups all purpose flour
- 1/2 Cup unsweetened cocoa powder
- 1 Teaspoon baking powder
- 1/2 Teaspoon baking soda
- 1/4 Teaspoon salt
- 1/2 Cup pitted and chopped fresh cherries
- 4 oz. Bittersweet chocolate bar cut into chunks and a little extra for topping
Instructions:
- To the bowl of a stand mixer fitted with a paddle attachment, add the softened butter, granulated sugar and brown sugar and mix until fluffy. Add the egg and vanilla extract and continue mixing until combined.
- In a separate large mixing bowl whisk together the all purpose flour, cocoa powder, baking powder, baking soda and salt . Pour the flour mixture into the butter mixture and mix on low speed until combined. Add the cherry pieces and chocolate chunks and continue mixing until just combined, being careful not to over mix. Wrap dough in plastic wrap and place in the refrigerator for 30 minutes.
- Preheat oven to 350º and line a baking sheet with parchment paper. Remove dough from the refrigerator and scoop out small rounds using an ice cream scoop. Place cookie dough rounds on prepared baking sheet 2” apart. Top with extra chocolate chunks and place in preheated oven for 15 to 18 minutes or until edges are slightly firm. Remove from oven and allow to cool on a wire rack before serving.
