The addition of both grated apples and carrots not only make this loaf cake moist and tender but they also add a natural sweetness. Then paired with the fall flavors of cinnamon and nutmeg and you’ve got yourself a great snack. But I had to take it a step further. I wanted a little crunch. That’s where the pecan crumble topping came in. It added just the right amount of sweetness and crunchy texture to finish off the cake. Now you can leave the pecan crumble topping off and you would still have a great snack, but I think that the pecan crumble topping is the piece de resistance. The perfect finishing touch.
What You Need To Make Carrot Apple Loaf With Pecan Crumble Topping:
- Carrots: You can use a food processor to shred the carrots but I used a box grater. It worked just as well and less clean up.
- Apples: For this recipe I used Fuji apples but Gala would work as well. If your looking for a more tart apple, then go with a Granny Smith. Don’t worry about peeling the apples, I grated them skins and all.
- All Purpose Flour:
- Brown Sugar: Light or dark.

Tips For Making Carrot Apple Loaf With Pecan Crumble Topping:
- No need to bring out the food processor. I used a box grater and it worked fine and the best part is there is less mess. Just watch you fingers.
- I really like the taste and texture of a Fuji apple but Galla will work as well. If you are looking for a more tart apple then you can use a Granny Smith.
- For baking, use a 9” x 5 “ loaf pan and line it with a piece of parchment paper. This will allow the cake to be removed from the pan easily.
How To Make Carrot Apple Loaf With Pecan Crumble Topping
Start by preheating the oven to 350º. Line a 9” x 5” loaf pan with parchment paper and coat with baking spray. Set to the side.
To a large mixing bowl add the all purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg and salt and whisk to combine.
To a separate medium mixing bowl, whisk together the egg, brown sugar, granulated sugar, plain greek yogurt, avocado oil and pure vanilla extract.
Pour the wet ingredients into the dry ingredient and using a rubber spatula, mix until combined.
Fold in the grated carrots and apples until combined.
Pour batter into the prepared loaf pan and set to the side.
For the Pecan Crumble Topping, to a small bowl add the all purpose flour, brown sugar, chopped pecans and cinnamon. Add the melted butter and mix with a fork until crumbs form.
Generously sprinkle pecan crumble over batter and place in the preheated oven and bake for 50 to 55 minutes or until crumble top is golden brown and toothpick inserted in the center comes out clean.
Remove from oven and allow to cool on a wire rack before serving.

For Cake:
- 1 Cup all purpose flour
- 1/2 Teaspoon baking powder
- 1/2 Teaspoon baking soda
- 2 Teaspoons ground cinnamon
- 1/2 Teaspoon ground nutmeg
- 1/4 Teaspoon salt
- 1 Egg
- 1/2 Cup brown sugar
- 1/4 Cup granulated sugar
- 1/3 Cup avocado oil or vegetable oil
- 1/4 Cup plain greek yogurt
- 2 Teaspoons pure vanilla extract
- 3/4 Cup carrots, grated ( about 2 large carrots )
- 3/4 Cup unpeeled apples, grated ( about 1 large apple, Fugi, or Gala )
For Pecan Crumble Topping:
- 1/2 Cup all purpose flour
- 1/4 Cup dark brown sugar
- 1/2 Cup pecans chopped into small pieces
- 1 Teaspoon ground cinnamon
- 3 Tablespoon unsalted butter, melted
Instructions:

- Sprinkle the top of the cake with the crumble. Place in the preheated oven and bake for 50 to 55 minutes or until crumble topping is golden brown and toothpick inserted in the center comes out clean. Remove from oven and allow to cool on a wire rack before cutting and serving.
