These Brown Butter Oatmeal Chocolate Chunk Cookies have the perfect crunchy exterior while still maintaining that soft tender center.

  • Place butter in a small saucepan set over medium heat. Cook stirring occasionally until liquid turns golden and brown bits start to form at the bottom of the pan. Remove from heat and allow to cool.
  • Preheat oven to 375º. Line a baking sheet with parchment paper and set to the side.
  • In a large mixing bowl whisk together the flour, oats, baking powder, baking soda, ground cinnamon, espresso powder and salt until combined. Set to the side.
  • In a separate large mixing bowl beat, using a hand mixer, the cooled brown butter, brown sugar and granulated sugar until combined. Add the eggs and vanilla extract and continue beating until smooth. Beat in the dry ingredients until combined. Fold in the chocolate chunks until incorporated.
  • Scoop out dough using a medium sized ice cream scoop and place 2” apart on the prepared baking sheet. Top each dough ball with some extra chocolate chunks then bake in the preheated oven for 11 minutes. Remove from oven and allow to cool slightly before serving.
