Bow Tie Cookies With Apricot Preserves are a great little treat. They are a tender pastry that hugs a sweet apricot preserve then they are dusted with a powder sugar for that little extra sweetness. The perfect addition to any Holiday table.
Bow Tie Cookies With Apricot Preserves
Ingredients:
- 8 oz. Cream Cheese, softened
- 8 oz. (1 cup ) Unsalted butter, softened
- 2 1/2 Cups all purpose flour
- 1 (12 oz.) Jar apricot preserves
- 1 Egg beaten
- Powdered sugar for dusting
Instructions:
- Add the softened cream cheese and butter to the bowl of a stand mixer fitted with a paddle attachment. Beat at high speed until light and fluffy, about 3 minutes, scrapping the sides of the bowl as needed. With the mixer on low speed, gradually mix in the flour until a smooth dough forms. Turn dough out onto a lightly floured surface and knead into a ball. Divide dough into three equal portions and wrap each portion in plastic wrap and refrigerate for 2 hours or until easy to handle.
- Preheat oven to 400º. Line a baking sheet with parchment paper and set to the side. Remove one dough from the refrigerator and roll out on a lightly floured surface to a 1/8” thick rectangle. Cut dough into 2” squares. Spoon 1/2 teaspoon of apricot preserves onto the center of each square. Fold one corner into the center and dab with beaten egg. Bring the opposite corner into the center and pinch firmly together. Place on prepared baking sheet and repeat with the remaining dough. Place in the preheated oven and bake for 10 to 12 minutes or until golden and puffy. Remove from oven and allow to cool completely on a wire rack.
- Once cookies are completely cooled dust with powdered sugar and serve. For storage, place cookies in an air thigh container for up to five days or in the freezer layered between wax paper in zip lock bags for up to three months.
