Once early Summer rolls around in my house, you can almost guarantee that you can find me at a local farm picking up some local produce on any given weekend.. There is nothing like fresh local produce to add to your recipes. My family loves going to our local you pick farm. Wether it be strawberries, peaches, tomatoes or blueberries you are not only getting the freshest produce possible, but you are also getting a day out with your family without the everyday distractions that tend to get in the way. It’s just a day outside spent together.
Since blueberry season is upon us we went to the farm, each of us a basket in hand and picked as many ripe juicy blueberries as possible, not to mention the handful of blueberries we ate while picking. Once we brought them to the car and saw how many blueberries we actually had, my gears started turning. What could I do with this beautiful bounty that we just picked? Some of the normal things that came to mind were, a Blueberry Pie, Blueberry Galette and some blueberry muffins. Having some blueberries left over after making all of those things, ( I told you, we picked a lot of blueberries ) I decided to make this Blueberry Lemon Loaf, and I must say, it didn’t disappoint. So full of sweet blueberries and bright lemon flavor, then topped with a silky blueberry lemon glaze. Well, needless to say it is my new family favorite. So why not give it a try. Ingredients Needed To Make This Loaf
*Granulated Sugar: For added sweetness and texture.
*Butter: This recipe calls for the butter to be melted. I place my butter in a small Pyrex dish then cover with a piece of plastic wrap. Place it in the microwave for 30 second intervals. I always opt for unsalted butter so that I can control the salt in my recipes.
*Eggs: They are best left at room temperature so that they blend easily/
*Vanilla Extract: I always opt for pure vanilla extract rather than imatation vanilla extract.
*Flour: All purpose flour works well for this.
Baking Powder: This will give your loaf rise.
*Salt: Salt added to sweet dishes, enhances the flavor of that dish.
*Buttermilk: When combined with the baking powder will create air bubbles, helping give your load lift.
*Lemon Juice: Always opt for fresh squeezed
*Lemon Zest: The best way to zest a lemon is by using a microplane. It will give you very fine pieces of lemon zest.
*Blueberries: Fresh or frozen will do. If using frozen, there will be no need to defrost them before using.
*Powdered Sugar: This will be used to create the silky glaze.
Tips For Making This Loaf
* You can use fresh or frozen blueberries for this recipe. If using frozen, you do not have to defrost them.
* Tossing the blueberries in flour will help prevent them from sinking to the bottom of the cake.
* This loaf will fit in a 9” x 5” loaf pan. For easy release, line the pan with a piece of parchment paper then spray with baking spray.
* Always use fresh squeezed lemon juice.
* You want your lemon zest to be very fine. To accomplish this you will want to use a microplane.

Ingredients
- For The Loaf
1 Cup of granulated sugar
1/3 Cup unsalted butter, melted
2 Eggs
1 Teaspoon pure vanilla extract
1 1/2 Cups all purpose flour
1 Teaspoon baking powder
1/2 Teaspoon salt
1/2 Cup buttermilk
2 Tablespoons lemon zest
1 Tablespoon fresh squeezed lemon juice
1 Cup fresh or frozen blueberries
2 Tablespoons all purpose flour.
- For The Glaze
1/2 Cup fresh or frozen blueberries
1/2 Cup powdered sugar
1 Teaspoon fresh squeezed lemon juice
Directions
- Preheat oven to 350º. Spray a 9” x 5” loaf pan with baking spray. Line the loaf pan with parchment paper and spray once again with baking spray and set to the side.
- In a large mixing bowl beat the granulated sugar, melted butter, eggs, lemon juice and pure vanilla extract using a hand mixer until smooth.
- In a separate large mixing bowl, whisk together the flour, baking powder and salt until combined.
- Stir the flour mixture alternating with the buttermilk into the butter mixture, beating after each addition. Add the lemon zest and mix to combine.
- Toss the blueberries in the 2 tablespoons of flour until coated. Fold the blueberries into the batter until incorporated.
- Pour the batter into the prepared loaf pan and place in the preheated oven and bake for 55 to 60 minutes or until golden in color and toothpick inserted in the center comes out clean. Remove from oven and place on a wire rack to cool.
- While the loaf is cooling, you can make the glaze. Place the blueberries and lemon juice in a small saucepan set oven medium heat. Cook until blueberries start to break down and release their juices. Smash the blueberries slightly to help this process. Strain the blueberries, reserving there juice. Place the powdered sugar in a small bowl. Pour 2 tablespoons of the blueberry juice into the powdered sugar and whisk to combine until of drizzle consistency.
- Remove cooled loaf from the pan and drizzle with the glaze. Decorate with blueberries and serve.
