Blueberry Crumble

If you are looking for a simple recipe that packs a whole lot of flavor, then this Blueberry Crumble is the way to go. It is loaded with plump juicy blueberries and topped with a sweet crunchy crumble, top it with some vanilla ice cream and you have a delicious dessert that anyone would love.

Blueberries have to be one of my favorite fruits. When in season they are sweet and crunchy and loaded with flavor. You know the ones I’m talking about, the plump ones that snap when you bite into them. They are great mixed into recipes or just on there own as a snack. I even enjoy them frozen on a hot day instead of a sugar laden ice pop, but I digress.

Blueberries not only have great flavor but they are also loaded with nutritional benefits. Blueberries contain a high dose of antioxidants which may reduce the risk of many diseases like heart disease and cancers, so they’re a win win, right?

Now I make many blueberry desserts but I always seem to find my way back to this one. I love this Blueberry crumble because not only dose it taste great but it is super easy to make as well. With the plump blueberries, and the sweet crispy crumble and topped with some vanilla ice cream its the perfect bite that everyone will love.

How To Make Blueberry Crumble:

Preheat the oven to 350º.

Start by making the crust. To a large mixing bowl add the old faction oats, all purpose flour, brown sugar, baking soda, ground cinnamon and salt and mix to combine.

Once your dry ingredients are incorporated set them to the side.

In a microwave save bowl, melt your butter. Now I have learned the hard way so I am going to give you a bit of advice. Cover the bowl with the butter with a piece of plastic wrap. I can’t tell you how many times I have put butter in the microwave to melt only to hear a pop and when I open the microwave door there is butter everywhere. So a simple way to eliminate the butter mess is just to cover it. That’s my tip for today. When your butter is completely melted, pour it over the dry ingredients and toss it with a fork until it comes together.

Once your butter is incorporated into the dry ingredients, pour 2/3 of the mixture into a 9” x 13” casserole dish and press it down firmly, making sure to get it into all the corners. I like to press it down with the bottom of a measuring cup so that it creates a nice flat even surface.

Rinse and drain your blueberries and place them in a large bowl. Add the granulated sugar and cornstarch and toss them until they are completely coated.

Pour the coated berries over your prepared crust and spread to cover. Crumble the remaining oat mixture on top.

Place in the preheated oven and bake for 25 to 30 minutes or until top is golden brown and the blueberry juices start to bubble.

Ingredients:

  • 2 1/4 Cups old fashion oats
  • 2 1/4 Cups all purpose flour
  • 1 1/2 Cups brown sugar
  • 1 Teaspoon ground cinnamon
  • 1 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Cup unsalted butter ( 2 sticks ) melted
  • 3 1/2 Cups fresh or frozen blueberries
  • 1/4 Cup granulated sugar
  • 1 Tablespoon Cornstarch

Instructions:

  1. Preheat oven to 350º.
  2. In a large mixing bowl combine the oats, flour, brown sugar, cinnamon, baking soda and salt.
  3. Melt the two sticks of butter in a microwave safe bowl. Pour the melted butter over the oatmeal mixture and mix with a fork until completely combined. Pour 2/3 of the crumb mixture into a 9” x 13” casserole dish and press down firmly until flattened. Set aside.
  4. Rinse and drain blueberries and place them in a medium mixing bowl. Add the granulated sugar and cornstarch and mix to coat.
  5. Pour coated berries over prepared crust and top with remaining crumb mixture. Place in preheated oven and bake for 25 to 30 minutes or until top is golden brown and blueberry juices start to flow.
  6. Remove from oven and allow to cool slightly. Serve warm with some vanilla ice cream or for a great snack allow to cool completely and cut into bars.
