For years I have bought the boxed breakfast bars from the store to add to my kids lunch box. Mind you I would buy the ones with natural ingredients and I would try to get ones that weren’t mostly sugar. I did it because it was convenient. Then one week the store didn’t have the bars in so I decided to make them myself. Well my whole family loved them, even more then the store bought ones. Luckily for me they were super quick and easy to make.
These bars have very simple ingredients and can really come together start to finish in 45 minutes. With there sweet juicy blueberries and there crunchy oatmeal crust it is sure to be a staple in anyone’s home.
Shopping List For Blueberry Breakfast Bars:
- Old fashion rolled oats
- Flour
- Light brown sugar
- Cinnamon
- Baking soda
- Salt
- Butter
- Blueberries
- Cane sugar
- Corn starch
How To Make Blueberry Breakfast Bars:
Start by preparing the crust. Mix together the oats, flour, brown sugar, cinnamon, baking powder and salt. Add one cup of melted butter and fully combine. Place 1/3 of mixture aside to use as the crumb topping. Press the remainder of the oatmeal mixture onto the bottom of a 9 x 13 pan and set aside.
In a medium bowl mix together blueberries, ( they can be fresh or frozen, I like to use frozen because I always keep a large bag in the freezer, but when its blueberry season I use fresh ) cane sugar and corn starch until all the berries are completely coated. Pour coated berries on top of prepared crust and spread out evenly. Place remainder of oatmeal crumble on top of blueberries and bake. Once cooled these bars can be eaten right away or they can be wrapped and frozen for up to a month, if you can get them to last that long. It’s that simple.
Blueberry Breakfast Bars:
Ingredients:
- 2 1/4 Cups old fashion oats.
- 2 1/4 Cups all purpose flour.
- 1 1/2 Cups light brown sugar.
- 1 Teaspoon ground cinnamon.
- 1 1/2 Teaspoon baking soda.
- 1/2 Teaspoon salt.
- 1 Cup melted butter ( 2 sticks ).
- 3 1/2 Cups fresh or frozen blueberries.
- 1/4 Cup sugar.
- 1 Tablespoon corn starch.
Instructions:
- Preheat oven to 350º.
- In a large mixing bowl combine the old fashion oatmeal, flour, light brown sugar, cinnamon, baking soda and salt.
- Melt two sticks of butter in a microwave safe bowl. Pour melted butter over oatmeal mixture until fully combined. Place 1/3 of the crumb mixture aside. Press the remainder 2/3 of oatmeal mixture into the bottom of a 9 x 13 pan.
- In a separate bowl combine blueberries, sugar and corn starch. Mix until all the berries are completely coated with the sugar and corn starch.
- Pour berries over prepared crust and top with remaining crumb mixture. Bake at 350º for 25 – 30 minutes, or until top is golden brown and blueberry juices start flowing.
- Remove from oven and let cool completely. Cut into bars and serve.
