Blueberry Almond Granola

With crunchy clusters of granola that are flavored with warm cinnamon and nutmeg, to the sweet dried blueberries combined together with maple syrup and brown sugar, this granola is sure to become a new family favorite.

Ingredients

  • 3 Cups old fashioned oats

  • 1 Cup chopped almonds

  • 1 Cup shredded coconut

  • 1 Teaspoon ground cinnamon

  • 1/4 Teaspoon ground nutmeg

  • 1/2 Cup pure maple syrup

  • 1/4 Cup light brown sugar

  • Pinch of salt

  • 1/2 Cup coconut oil, melted

  • 1 Teaspoon pure vanilla extract

  • 1 Teaspoon pure almond extract

  • 1 Cup dried blueberries

Directions

  • Preheat oven to 300º. Line a baking sheet with parchment paper and set to the side.
  • To a large mixing bowl add the oats, almonds, coconut, sugar, cinnamon, nutmeg and pinch of salt. Mix to combine.
  • Melt the coconut oil in a microwave safe bowl. Add the maple syrup, vanilla extract and almond extract and mix until thoroughly combined.
  • Pour the coconut oil mixture over the oat mixture and using a rubber spatula, fold all the ingredients together to combine. Pour out mixture onto the prepared baking sheet and spread out to form a single layer. Place in the preheated oven and bake for 40 to 45 minutes or until golden in color. Do not stir granola while it is baking, this will allow it to form clusters. Remove from oven and allow to cool. Break up granola into clusters and place in a large bowl. Add the dried blueberries and mix to combine. Store in an air tight container.
