These Blackberry Lemon Cookies have a soft chewy texture. They are bursting with sweet blackberries and just the right amount of tangy lemon flavor.
Cookies are a fun dessert to serve for kids and adults alike. There is not limit to the amount of flavors you can create with a cookie from a regular Chocolate Chip Cookie to something a little bit more fancy like my Blueberry Cookies With Lemon Glaze. Since it is berry season and I have plenty of blackberries, I decided to make use of them and incorporate them into a cookie. I love adding lemon to fruit desserts so I figured why not the cookie. So there you have it, Blackberry Lemon Cookies. A soft chewy treat to satisfy anyone.
How To Make Blackberry Lemon Cookies
When using blackberries in desserts I like to freeze them first. This will help the blackberry to stay together when mixed into batters or doughs. Just rinse and drain them and place them on a baking sheet in a single layer. Place the baking sheet in the freezer until the berries are frozen.
Preheat the oven to 350º. Line a baking sheet with parchment paper and set to the side.
In a large mixing bowl whisk together the all purpose flour, baking powder, baking soda and salt and set to the side.
To the bowl of a stand mixer fitted with a paddle attachment add the room temperature butter, granulated sugar and brown sugar and mix at high speed until incorporated.
Add the lemon zest, fresh squeezed lemon juice, egg and egg yolk and mix until combined.
Pour the dry ingredients into the wet ingredients and mix until just combined. Remove blackberries from the freezer and add the frozen blackberries to the mixer. Mix once agin until combined, making sure not to over mix. It is ok for the blackberries to breakup slightly.
Scoop out dough using a small ice cream scoop and place on the prepared cookie sheet. Place in the preheated oven and bake for 15 minutes or until edges are golden brown. Remove from oven and allow them to cool on a wire rack.
Once cooled they are ready to eat. Enjoy!!!

Ingredients:
- 2 3/4 Cup all purpose flour
- 1/2 Teaspoon baking powder
- 1/2 Teaspoon baking soda
- 1 Teaspoon salt
- 2 Sticks unsalted butter melted and cooled
- 1 Cup granulated sugar
- 1/2 Cup brown sugar
- 1 Cup frozen blackberries
- 1 Tablespoon lemon zest
- 2 Tablespoons fresh squeezed lemon juice
- 1 Egg and 1 egg yolk
Instructions:

- Pour the dry ingredients into the wet ingredients and mix until just combined. Add the frozen blackberries and mix to incorporate, being careful not to over mix. It is ok if the blackberries breakup slightly. Scoop out dough using a medium sized ice cream scoop and place them on the prepared baking sheet.
- Place baking sheet in the preheated oven on the middle rack and bake for 15 minutes or until the edges just start to turn golden brown. Remove from oven and allow to cool on a wire rack.
