It’s Summer, so fresh cherries are plentiful. So what better time than now to incorporate them into a delicious Black Forest dessert. Now normally I would be thinking a rich and chocolatey Black Forest Cake but lately I have been craving brownies, so I thought why not incorporate the flavors of a Black Forest cake into that rich chocolatey brownie. By swirling in dollops of sweet cooked cherries you will get all the flavors of that Black Forest Cake but in Brownie form.

What You Will Need To Make These Brownies

Equipment:

  • Cherry Pitter: this will make the job of pitting your cherries much easier.
  • Baking Tray: For these brownies I used an 8” x 8” sturdy baking tray.
  • Parchment Paper: This is used to line your baking tray to prevent sticking.

Ingredients:

  • Cherries: Fresh cherries are best. Stems removed and pitted
  • Sugar: This recipe calls for both Granulated Sugar and Dark Brown Sugar, both for added sweetness and texture.
  • Chocolate: I like the richness of Bittersweet Chocolate.
  • Butter: I like to use unsalted butter so that I can control the salt content in my recipes.
  • Eggs: These are the binders in this recipe. They will also add moisture and texture.
  • Vanilla Extract: I always opt for Pure Vanilla Extract due to its intense vanilla flavor.
  • Flour: A good All Purpose Flour works best.
  • Unsweetened Cocoa Powder: I like to use a Double Dark Unsweetened Cocoa Powder. This will enhance that chocolate flavor and add a deep dark color.
  • Espresso Powder: Adding Espresso Powder to recipes containing chocolate will help elevate the chocolate flavor.

  • Place the pitted cherries, 1/3 cup of sugar and water in a small saucepan set over medium heat. Cook for 10 minutes or until cherries break down and are soft. Remove from heat and allow to cool. This will be enough to incorporate in the brownies and drizzle on top when serving.
  • Preheat oven to 350º. Line a 8” x 8” baking tray with parchment paper and set to the side.
  • Place the butter and 4 oz of chocolate in a medium saucepan. Set over medium low heat and cook until completely melted and smooth. Remove from heat and allow to cool.
  • In a large mixing bowl, whisk together the flour, cocoa powder, espresso powder and salt until combined. Set to the side.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs and both sugars until pale in color, about 3 minutes. Add the vanilla extract and continue beating until combined. With the mixer on low speed, slowly stream in the melted chocolate until incorporated. Fold in the flour mixture and the chocolate chips until combined.
  • Spread half of the brownie mixture in the prepared baking dish. Add a layer of cooled cherries on top. Cover with the remaining brownie batter and scatter some cherry mixture on top ( leaving some extra cherries for serving ). Sprinkle the top with a handful of chocolate chips.
  • Place in the preheated oven and bake for 35 to 40 minutes or until edges are stiff and center is set. Remove from oven and allow to cool. Serve with vanilla ice cream and top with the reserved cherries.
