  • Rubber Spatula: Using a rubber spatula will give you the ability to mix your ingredients thoroughly. It also makes it easier to get every last bit of batter out of the bowl so that none of that delicious batter is wasted.
  • Muffin Baking Trays: It is important to have a good muffin tray. I like to use one that is sturdy and non stick. This way any batter that may get on the tray, can easily be removed.

Ingredients:

Ingredients

  • For The Muffins
  • 1 1/2 Cups All Purpose Flour

  • 3/4 Teaspoon baking soda

  • 1/4 Teaspoon salt

  • 6 Tablespoons unsalted butter, browned

  • 1/2 Cup Granulated Sugar

  • 1/2 Cup Brown Sugar

  • 1/3 Cup plain full fat greek yogurt

  • 1 Egg

  • 2 Teaspoons Pure Vanilla Extract

  • 2 Medium, ripe bananas

  • Cinnamon Sugar
  • 2 Tablespoons brown sugar

  • 1 Teaspoon Ground Cinnamon

  • Crumble Topping
  • 1 Cup + 2 Tablespoons all purpose flour

  • 1 Teaspoon Cinnamon

  • 3/4 Cup brown sugar

  • 1/2 Cup butter, melted

Directions

  • Preheat oven to 350º. Line a Muffin Tin with paper liners and set to the side.
  • Place the 6 tablespoons of butter in a small saucepan pan set over medium low heat. Cook stirring occasionally until liquid turns slightly golden and brown bits have formed at the bottom of the pan. Remove from heat and allow to cool .
  • For the cinnamon sugar, combine the 2 tablespoons of brown sugar with 1 teaspoon of ground cinnamon and whisk to combine. Set to the side.
  • Prepare the crumble top by whisking the flour, brown sugar and cinnamon together until combined. Pour in the 1/2 cup of melted butter and mix together with a fork until crumbs form. Set to the side.
  • To prepare the muffins, whisk together the flour, baking soda and salt until combined. To a separate mixing bowl whisk together the cooled brown butter, granulated sugar and brown sugar until combined. Add in the yogurt, egg, vanilla extract and mashed bananas and continue mixing until completely combined. Pour in the flour mixture and mix together to incorporate.
  • To assemble the muffins, fill each muffin tin half way. Top with a spoonful of cinnamon sugar then top with remaining batter, filling each muffin liner to 3/4 full. Generously top each one with the prepared crumble topping.
  • Place muffin trays in preheated oven and bake for 20 to 25 minutes or until toothpick inserted in the center of one of the muffins comes out clean. Remove from oven and allow to cool slightly on a wire rack before serving.
