What You Will Need To Make These Muffins

Equipment:

  • Mixing Bowls: Having mixing bowls in a variety of sizes help when preparing your recipes. I like to use glass mixing bowls as to eliminate any chemical reaction that a metal bowl may have with certain ingredients.
  • Muffin Baking Tray: I prefer to use a sturdy non stick muffin tray, which will allow for an easy clean up.
  • Paper Tulip Muffin Liners: I always line my muffin tins with paper liners. This will ensure that my muffins will not stick and can be removed from the trays easily. It also provides a vessel in which to hold your muffins when on the go.
  • Silicone Spatula: I like to use a silicone spatula to blend my ingredients and to scrape out all the batter from the mixing bowl.

Ingredients:

  • Baking Powder: This is the leavening agent allowing them to rise and giving your muffins that light airy texture.
  • Salt: A small amount of salt will enhance the flavors in your recipe.
  • Spices: Ground Cinnamon and Ground Nutmeg will add a bit of warmth to these muffins.
  • Sugar: This recipe calls for both Granulated Sugar and Light Brown Sugar adding both sweetness and texture.
  • Butter: Unsalted butter is best so that you can control the salt in your recipe.
  • Eggs: The eggs act as a binder in the recipe, adding structure and also a bit of moisture.
  • Vanilla Extract: I always opt for Pure Vanilla Extract due to its intense vanilla flavor.
  • Greek Yogurt: Will give your muffins a fluffy texture while also adding a tangy flavor.
  • Blueberries & Bananas: You can use fresh or frozen blueberries and as for the bananas, the riper the better.
  • Sparkling Sugar: For a little extra crunch on top.
