Avocado Toast With Roasted Strawberries, Goat Cheese & Balsamic Glaze

I am always looking for an quick and easy breakfast that is satisfying enough to get me through my morning. For me avocado toast is the way to go.

Avocados are a great source of nutrients. They have an enormous amount of health benefits, like high fiber for gut health, healthy fats for heart health and they are also rich in antioxidants and anti inflammatory compounds. So all around a great way to start your day. They are so versatile as well. So give them a try.

I make roasted strawberries a lot. They’re a sweet treat to put on yogurt, ice cream and you got it, avocado toast. I make them ahead of time and store them in a container in the refrigerator for up to three days. Maybe more but we eat them before I can find out 😁.

Its super easy. Clean 2 lbs. of strawberries, cut in half and place them in a large glass baking dish in a single layer. Drizzle with honey and bake in the oven at 325º for 1 and 1/2 hours or until strawberries turn dark red and a syrup forms at the bottom of dish. Take out of the oven and let cool completely. Once cooled add an additional 1/2 cup of roughly chopped fresh strawberries and stir to coat.

Char bread of choice until crispy. I like to char my bread on the grill as to not set my alarms off 😬 but you can also use the oven or toaster if you like. Cut avocado in half long ways. Split in half, remove seed and scoop out flesh with a spoon. Place avocado in a small bowl and add the juice of 1/2 of a lemon.

Mash avocado and lemon juice together with a fork. Add salt and pepper to taste.

Spread mashed avocado onto charred bread. Top with roasted strawberries and some of that strawberry syrup if you like 😋. Top with crumbled goat cheese and drizzle with balsamic glaze. It’s that easy.

Ingredients:

  1. 2 Slices sour dough bread, ( or bread of choice ) charred
  2. 1 Ripe avocado
  3. Juice of 1/2 of a lemon
  4. 2 lbs. Of ripe strawberries
  5. 1/2 Cup fresh diced strawberries
  6. 3 Tablespoons honey
  7. 2 Ounces goat cheese, crumbled.
  8. Balsamic glaze for serving

Instructions:

  1. Pre heat oven to 325º. Clean the 2 lbs. of strawberries, cut in half and place into a large glass baking dish. Drizzle with honey and bake for 1 1/2 hours or until strawberries become dark red and a syrup forms at the bottom of the baking dish. Meanwhile clean and dice 1/2 cup of strawberries and set to the side. Remove strawberries from oven and set aside to cool completely. Once strawberries are completely cooled add fresh strawberries to the cooked strawberries and mix to combine.
  2. Char two pieces of sour dough bread ( or bread of choice ). Set on the side.
  3. Slice an avocado in half long ways and remove the pit. Scoop out flesh with a spoon and place into a small bowl, squeeze in the juice of a 1/2 of a lemon. Mash with a fork until desired consistency, add salt and pepper to taste.
  4. Spread mashed avocado onto charred toast, top with roasted strawberries, crumbled goat cheese and a drizzle of balsamic glaze.
  5. Enjoy.
