Looking for a simple cookie to please friends and family? The simple Almond Spritz Cookie is the way to go. It’s a perfect tender cookie that is elevated with the addition of almond extract to give it a rich almond flavor. Serve it plain, sprinkled with sparkling sugar or just dusted with powdered sugar for a little extra sweetness.
Almond Spritz Cookies
Ingredients:
- 1 Cup unsalted butter, softened
- 3 oz. Cream cheese, softened
- 1 Cup granulated sugar
- 1/4 Teaspoon salt
- 1 Egg yolk
- 1 Teaspoon pure vanilla extract
- 1/4 Teaspoon almond extract
- 2 1/2 Cups all purpose flour
- Colored sugars for decorating.
Instructions:
- Preheat oven to 350°. Line a baking sheet with parchment paper and set to the side. To the bowl of a stand mixer fitted with a paddle attachment beat the softened butter and cream cheese until fluffy. Add the granulated sugar and salt and beat until combined scraping the sides of the bowl as needed. Add the egg yolk and the Vanilla and Almond Extract and continue mixing until combined. Add the all purpose flour and beat until incorporated.
- Place the room temperature cookie dough through a cookie press fitted with the shape of your choice. Press out onto prepared baking sheet 2 inches apart. If desired, sprinkle the tops with colored sugar. Bake in the preheated oven for 8 to 10 minutes or until edges are firm but not brown. Remove cookies from oven and allow to cool on a wire rack.
- To store, place cookies in an airtight container for up to one week or between sheets of wax paper in a Ziploc bag stored in the freezer for up to three months.
