So If you like almond flavored desserts, like my family dose, this is the cookie for you.
Almond Horns
Ingredients:
For The Dough:
- 7 oz. Almond paste
- 1 Cup almond flour
- 1 1/2 Teaspoons pure vanilla extract
- 1/2 Teaspoon almond extract
- 1 Cup powdered sugar
- 1/4 Teaspoon salt
- 1 Egg white
For Decorating:
- 1 Egg white
- 1 Cup sliced almonds
- 3/4 Cup bittersweet chocolate
- 1 Teaspoon coconut oil
Instructions:
- Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
- To the bowl of a stand mixer fitted with a paddle attachment, add the almond paste and mix until broken up. Add the almond flour, vanilla extract, almond extract, powdered sugar, salt and one egg white. Beat until a dough forms.
- To a small bowl, add 1 egg white and scramble with a fork and set to the side. Place the sliced almonds in a separate bowl and set to the side.
- Scoop out dough into 1” to 1 1/2” balls. Roll each ball into a small log about 3” to 4” long. Form each log into a crescent shape. Dip each crescent into the scrambled egg whites then into the sliced almonds. Place each one on the prepared baking sheet 2” apart. Place in the preheated oven and bake for 15 to 16 minutes or until lightly browned. Remove from oven, place baking sheet on a wire rack to cool slightly. Remove cookies from baking sheet and allow to cool completely on a wire rack.
- Meanwhile, place the bittersweet chocolate in a double boiler along with the coconut oil. Melt over medium heat until smooth.
- Once cookies are completely cooled, dip each end of the crescent cookie into the melted chocolate, then place on a wire rack to set, then serve.
- Enjoy.
