These Almond Butter Bon Bons are a great healthy snack when you are looking for a treat to satisfy your sweet tooth. They are perfect for an after school snack or a pre workout energy boost. Either way you and your family will love these sweet treats.

I am always looking for a quick healthy snack that my kids would enjoy as an after school treat. They would come home everyday, open the fridge and just stand there looking as if something was going to pop out and say “ pick me “. So I wanted it to be something that was easy for them to just grab and go, but it had to be a healthier snack as well. Most important, it had to taste good or they would not be interested.

When I put together these Bon Bons, they were a huge hit. Not only did my kids love them, but so did I, but then again I love anything dipped in dark chocolate.

Ingredients To Make Almond Butter Bon Bons

  • Pitted Dates: Dates are considered a superfood because they are packed with nutrients. They are rich in antioxidants, which helps in the health of our cells and they are also high in fiber which aids in digestion. Not to mention they are delicious.
  • Puffed Rice Cereal: Puffed rice is a cereal that has an airy crunchy texture and has a mild nutty flavor.
  • Rolled Oats: Oats have many health benefits, including lowering blood sugar and cholesterol and even reducing the risk of heart disease. They are most often used for cereal but make a great addition to this recipe.
  • Flaked Coconut: Not only dose coconut taste great but it is also good for bone health and cell protection
  • Almond Butter: Almond butter is a vitamin rich nut butter. It is high in fiber and heart health fats. Its flavor is comparable to peanut butter but slightly nuttier. A great alternative for those who have a peanut allergy.

  • Bittersweet Chocolate: I love bittersweet chocolate for its deep rich flavor, but it also has health benefits like improving heart health and supporting digestive health.

Almond Butter Bon Bons

The perfect healthy treat when you are looking for something to satisfy that sweet tooth.

Ingredients

  • 1 1/2 Cups pitted dates

  • 1 1/2 Cups puffed rice cereal

  • 1/2 Cup rolled oats

  • 1/4 Cup flaked coconut

  • 1/4 Teaspoon sea salt.

  • 2/3 Cup almond butter

  • 1/4 Cup raw honey

  • 1/2 Teaspoon pure vanilla extract

  • 8 oz. Bittersweet chocolate

  • 1 Teaspoon coconut oil

Directions

  • Bring a small pot of water to a boil. Add dates to a heat proof bowl, then pour the boiling water over the dates to cover, set aside for 5 minutes. Remove dates from the water, reserve the soaking liquids.
  • Meanwhile to the bowl of a food processor, add the rice cereal, oats, coconut flakes and salt. Process into crumbs, then transfer to a medium bowl.
  • Add the dates and 2 tablespoons of reserved liquid to the food processor. Process until dates are broken down into small pieces. Add the almond butter, honey and vanilla and process until smooth ( you may need to add more reserved liquid, one tablespoon at a time to be able to process completely ). Return cereal mixture to food processor and process until smooth and fully combined.
  • Using a small ice cream scoop or a tablespoon, scoop out about 1 tablespoon sized portion of mix and roll into a ball. Place balls on parchment lined baking sheet and refrigerate until firm.
  • While the Bon Bon’s are chilling, melt chocolate and coconut oil in a double boiler until smooth. Remove Bon Bon’s from the refrigerator and dip each ball into the melted chocolate to coat completely. Place each one back on the lined baking sheet and return to the refrigerator to set.
  • Once they are set, they can be transferred to a ziplock bag or air tight container and store in the refrigerator for up to seven days or in the freezer for up to three months.
