These little Almond Apricot Tarts are the perfect after dinner treat. With there flaky crust and filling that is loaded with almond flavor then topped with sweet apricot preserves. They make a great dessert for any dinner party.
Almond Apricot Tarts
Ingredients:
- 1/2 Cup unsalted butter, softened
- 3 oz. cream cheese, softened
- 1 Cup all purpose flour
- 1/3 Cup unsalted butter
- 1/2 Cup granulated sugar
- 1 Egg
- 1/2 Teaspoon pure vanilla extract
- 2/3 Cup coarsely ground almonds
- 1/3 Cup Apricot preserves
- Sliced almonds for decorating
Instructions:
- In the bowl of a stand mixer fitted with a paddle attachment, beat the 1/2 cup of butter and cream cheese on medium speed for 30 seconds . Add the all purpose flour and beat to combine. Wrap dough in plastic wrap and chill in the refrigerator for 1 hour or until dough is easy to handle.
- Meanwhile, for the filling, to the bowl of a stand mixer fitted with a paddle attachment, beat the 1/3 cup of butter on medium speed for 30 seconds. Add the granulated sugar and beat until combined. Beat in egg and vanilla extract till combined. Stir in the ground almonds.
- Preheat oven to 350º. Remove dough from the refrigerator. Press about 1 tablespoon of dough, evenly into the bottom and up the sides of a 2” tart pan. Spoon 1 tablespoon of almond filling into each tart pan. Place tart pans on a baking sheet. Place baking sheet in the preheated oven and bake for 20 to 25 minutes or until golden brown. Cool tarts in pans for 10 minutes.
- Place preserves in a microwave safe bowl. Microwave for 35 to 40 seconds or until melted. Remove tarts from the pans and place them on a wire rack. While still warm brush the tops of each tart with the melted preserves then garnish with sliced almonds.
